Recipe ingredients
- olive oil– a good quality extra-virgin olive oil is best.
- dairy-free chocolate chips– use any brand or type of chocolate that works for you. If you are looking for Paleo chocolate, check out HU Chocolate.
- coconut sugar– this has a lower glycemic index than other sugars.
- eggs– this helps bind the brownies together.
- almond flour– use blanched almond flour because it is more refined than almond meal and leads to a better texture in baked goods.
- baking soda– this helps the brownies rise.
- honey– any type of honey works, but I like to use raw honey.
- almond butter– make sure to use a creamy one without added sugar.
- jam/ jelly– use one without added sugar. I found the St. Dalfour brand to be the best option at my grocery store.

Ingredients
Brownie Ingredients:
- ½ cup olive oil
- 1 cup dairy-free dark chocolate chips
- ½ cup coconut sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2/3 cups almond flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Jam/ Almond butter swirl ingredients:
- 2 Tbs honey
- 1/4 cup almond butter
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup berry jam, (without added sugar, I like the St. Dalfour brand)
Instructions
- Preheat the oven to 325 degrees. Make sure your oven rack is in the upper third of the oven. Line an 8 x 8 inch pan with parchment paper.
- In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave. It took about 1 minute for my chocolate to melt this way. Add the coconut sugar and vanilla, and whisk.
- Let the chocolate mixture cool a bit, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.
- In another bowl, add the flour, baking soda and salt, and mix.
- Then, pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan and set aside.
- In a separate bowl, add the 2 Tbs honey, ¼ cup almond butter, ¼ tsp salt and ½ tsp vanilla and mix.
- Then, spoon the almond butter mixture and the jam on top of the brownie batter in the pan. There should by clumps of each on top. Use a knife to swirl the jam and almond butter together.
- Bake for 35-40 minutes, or until a tooth pick comes out clean.
Notes
- Instead of olive oil, you can use avocado oil or coconut oil.
- Instead of coconut sugar, you can use white sugar ( but it will no longer be Paleo).
- Instead of almond butter, you can use any nut butter of your choice.
