Hello swirls of almond butter and berry jelly!

I don’t know if I’ve loved the combo of almond butter and jelly/jam more than in these Paleo Almond Butter and Jelly Brownies. NOM.

The salty almond butter pairs so well with the sweet rich chocolate brownie underneath it and the hint of sweet berry jam swirled all around.

It’s dessert perfection if you ask me.

Sometimes you want something a little different than what you are used to. This happens to me often and when I wanted to make brownies that were different, then I started to do some research.

This research is how I came to make these Paleo Almond Butter and Jelly Brownies.

I was perusing the internet to get ideas and instantly became inspired by Joy the Baker’s Peanut Butter and Jelly Fudge Brownies recipe.

What a good idea!

I basically tweaked her recipe to make it Paleo, Grain-free, Dairy-free, and Gluten-free. I followed the methods she provided and found that it worked great with the ingredients that I used.

Ingredients needed to make these Paleo Almond Butter and Jelly Brownies:

  • olive oil
  • dairy-free chocolate chips
  • coconut sugar
  • vanilla
  • eggs
  • almond flour
  • baking soda
  • salt
  • honey
  • almond butter ( without added sugar)
  • jam ( without added sugar)

Note: any jelly/ jam will do as long as it doesn’t have added sugar in it. I found the St. Dalfour brand to be the best option at my grocery store. I also love using any of their berry flavors.

Also, make sure your almond butter doesn’t have any added sugar in it.

Lastly, many dairy-free chocolate chip brands aren’t “Paleo”, like Enjoy Life Chocolate Chips. I still like to use them but if you are looking for a Paleo chocolate, check out HU Chocolate.

How to make Gluten-free Almond Butter and Jelly Brownies:

To begin, you put the chocolate chips and olive oil into a microwave save bowl and melt the chocolate.

I usually do this in 15-30 minute increments.

Then add the coconut sugar and vanilla, to the chocolate bowl and whisk.

After that, whisk in one egg at a time. You’ll add three eggs separately. The mixture should thicken quite a bit by this point.

In a separate bowl, mix the almond flour, baking soda and salt together.

Then, pour the flour mixture into the chocolate mixture, and mix. Pour the brownie mixture into a pan.

Then you get your almond butter and jelly topping ready!

Add the honey, almond butter, some salt and vanilla to a small bowl and mix.

Then, add clumps of the almond butter mixture and the jam on top of the brownie batter.

Swirl the clumps together until a pretty pattern forms.

Then, bake until a tooth pick comes out clean.

I like waiting until these brownies cool a bit before cutting into them so that they stay together.

I love how the almond butter hardens and turns into almost like a brownie crust on top.

Paleo Almond Butter and Jelly Brownies (Gluten-free, Grain-free, Dairy-free)

Ingredients

Brownie Ingredients:

Jam/ Almond butter swirl ingredients:

  • 2 Tbs honey
  • 1/4 cup almond butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup berry jam, (without added sugar, I like the St. Dalfour brand)

Instructions

  • Preheat the oven to 325 degrees. Make sure your oven rack is in the upper third of the oven. Line an 8 x 8 inch pan with parchment paper.
  • In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave. It took about 1 minute for my chocolate to melt this way. Add the coconut sugar and vanilla, and whisk.
  • Let the chocolate mixture cool a bit, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.
  • In another bowl, add the flour, baking soda and salt, and mix.
  • Then, pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan and set aside.
  • In a separate bowl, add the 2 Tbs honey, ¼ cup almond butter, ¼ tsp salt and ½ tsp vanilla and mix.
  • Then, spoon the almond butter mixture and the jam on top of the brownie batter in the pan. There should by clumps of each on top. Use a knife to swirl the jam and almond butter together.
  • Bake for 35-40 minutes, or until a tooth pick comes out clean.
