I am obsessed with this maple glazed banana bread. From the hint of maple in the banana bread itself, to the maple glaze on top, it is just banana bread deliciousness that is great for breakfast, snack or dessert.

  • Olive oil– this is used as a butter replacement in this banana bread. There is also a tiny bit in the glaze. You won’t be able to taste it in either, though.
  • Eggs– 2 large eggs are used to bind the banana bread batter together.
  • Bananas– make sure they are ripe, to get that great banana taste and extra sweetness in the bread. You’ll need 2 or 3 depending on the size of them.
  • Maple syrup– use pure maple syrup in this recipe. This ensures the best taste, flavor and sweetness.
  • Vanilla– this is used in both the bread and glaze. You can use one either with or without alcohol in it.
  • Flour– an unbleached all purpose flour works great in this recipe.
  • Baking soda– this makes the maple banana bread rise while baking.
  • Cinnamon– this adds cozy Fall and Winter vibes to the bread.
  • Powdered sugar– this is the key to making the glaze. It helps the glaze harden after being poured on to the banana bread.

Instructions 

  • Preheat oven to 350 degrees F. Line and grease a 9 in x 5 in loaf tin. I line mine with parchment paper and grease it with an olive oil spray. Put the oven rack in the middle of the oven.
  • In one bowl, mix 1/3 cup olive oil, 2 eggs, 1 cup mashed bananas, 1/2 cup maple syrup, and 1 teaspoon of vanilla together.
  • In another large bowl, add 1 3/4 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon of ground cinnamon and mix it all together with a fork.
  • Pour the bowl of dry ingredients into the bowl of wet ingredients and mix until banana bread batter forms.
  • Pour the banana bread batter into the lined loaf tin. Bake for 45-55 minutes.
  • Remove the banana bread from the oven then let it cool for 10 minutes in the tin. Remove it from the loaf tin and let it cool on a wire rack.
  • While the banana bread cools, make the maple glaze. In a small bowl, mix 1/4 cup powdered sugar, 3 Tablespoons maple syrup, 1 teaspoon olive oil, 1 teaspoon vanilla, and a pinch salt. Mix until the glaze is smooth.
  • Once the banana bread is cooled, pour the glaze on top.
