This healthy mug brownie is a single serving, delicious, gluten-free and dairy-free brownie that cooks in 45 seconds in the microwave!

Can you tell that I’m into quick recipes these days? The quicker and more convenient the better. If you’ve got 5 minutes, then you can make this healthy brownie in a mug.

It is a great brownie craving option, all while being made without any refined flours or refined sugars. It is made with ingredients like almond flour, olive oil, and coconut sugar, which makes it naturally dairy-free and gluten-free. (But you would never know by the taste!)

Recipe ingredients

Ingredients needed to make a healthy mug brownie.
  • almond flour– use blanched almond flour because it is more refined in texture.
  • unsweetened cocoa powder– make sure there is no added sugar. Cocoa powder is actually said to help reduce inflammation.
  • coconut sugar-this has less processed than table sugar, and it has some nutrients and fiber inside.
  • almond milk– or any dairy-free milk of choice.
  • extra light olive oil– or melted coconut oil.
  • vanilla extract– this adds a nice flavor to the chocolate.
  • egg yolk– this binds the ingredients together as it cooks.
  • dairy-free chocolate chips– Use any kind of chocolate chips that work for you. Hu chocolate chips are dairy-free, Paleo, and made with coconut sugar. Enjoy life chocolate chips are dairy-free and allergy friendly. If dairy isn’t an issue for you, use semi-sweet chocolate chips.

Step 1: Get a microwave safe mug or ramekin. Then, mix the almond flour, cocoa powder, and coconut sugar together in the mug.

Step 2: Add the almond milk, olive oil, vanilla, and egg yolk to the ramekin and mix everything with a fork until a brownie batter forms.

Step 4: Cook in the microwave for 45 seconds.

Step 5: Wait a minute or two for the brownie to cool off, add ice-cream (optional) and enjoy!

Expert tips

  • Only microwave the brownie for 45 seconds. It will keep cooking after you remove it from the microwave.
  • As soon as you remove it from the microwave, add a few chocolate chips on top. They will get melty and add a delicious melted chocolate element to the brownie.
  • Add ice-cream to your brownie. It is the perfect single serving brownie and ice-cream dessert.

Recipe FAQs

How do you know if your mug is microwave proof?

You would think that the mug simply saying it is microwave safe is enough, but it isn’t. After much trial and error, I have found that if your mug gets very hot in the microwave, then it isn’t microwave proof. This means that the heat isn’t going to the brownie, it is going to the mug, and it thus won’t cook.

A mug is really microwave proof if the mug itself stays relatively cool after cooking in the microwave, but the brownie batter gets hot enough to cook and turn into a brownie.

I usually use a ramekin for my microwave recipes because they tend to be microwave proof and work best.

Why isn’t the full egg used in this recipe?

I frequently get asked why I only use the egg yolk in my microwave recipes. The answer is that the egg white portion of the egg is too high in water content. Using the whole egg would throw off the balance of the recipe and would result in a brownie that won’t cook right.

How do you serve this recipe?

You can add a scoop of ice-cream, whipped cream, coconut cream, almond butter or peanut butter to the top of this cooked brownie. You can also add jam or fruit!

  • Mix in the chocolate chips. Microwave for 45 seconds. Then, add a few choc chips on top. Serve as is or with ice-cream.

Notes

Make sure your mug or ramekin in microwave proof. If your mug gets too hot, the batter won’t cook. You want the batter to get hot and cook and not the mug
