- olive oil– a good quality extra virgin olive oil works great here.

- coconut sugar– this has a lower glycemic index than regular sugar. It is also Paleo friendly.
- eggs– this help bind the brownies together.
- almond flour– blanched almond flour works best for baking.
- baking soda– this helps the brownies rise.

Step by step almond flour brownie instructions
Step 1: Mix the olive oil and the dairy-free chocolate together in a bowl and melt it together in the microwave in 20 second intervals.
You can also melt the chocolate on the stovetop by creating a double boiler or in a pan.
Step 2: Mix the coconut sugar and vanilla into the melted chocolate.
Step 3: Whisk in the eggs, one at a time, into the chocolate batter.
Step 4: In a separate bowl, mix the almond flour, baking soda and salt together.
Step 5: Mix the dry ingredients into the chocolate batter.
Step 6: Mix until the batter is thick
Step 7: Pour batter into a baking tin and bake
Step 8: Let the brownies cool for a little bit and then cut.
Expert tips
- Make sure to use chocolate chips that you love or that fit into your dietary needs.
- For example, HU chocolate is Paleo but Trader Joes semi-sweet isn’t Paleo. However, both are dairy-free.
- Don’t overbake your olive oil brownies!
- If you know your oven runs hot, keep an eye on your brownies early. In general, keep an eye on them at around the 25-30 minute mark. If they over-bake, they wont be fudgy.

Yes! You can easily use olive oil to make brownies. Make sure to use a light colored, light flavored olive oil.
They can be! If you use olive oil ( or coconut oil or avocado oil) in your recipe instead of butter. And also if you use dairy-free chocolate, then your brownies can be dairy-free.

Healthy Almond Flour Brownies (Paleo, Dairy-free, Gluten-free)
Ingredients
- ½ cup olive oil
- 1 cup dairy-free chocolate chips
- ½ cup coconut sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2/3 cups almond flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 325 degrees F. Make sure oven rack is in the upper third of the oven. Line an 8 x 8 inch pan with parchment paper.
- In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave. It should take about 1 minute for the chocolate to melt this way. Add the coconut sugar and vanilla to the melted chocolate, and whisk.
- Let the chocolate mixture cool for a few minutes, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.
- In another bowl, add the flour, baking soda and salt, and mix.
- Then, pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan.
- Bake for 26-32 minutes, or until a tooth pick comes out clean. Cool for 30 minutes before slicing. Serves 16

These brownies turned out amazing! I used sugar-free chocolate and substituted the coconut sugar for allulose (1:1 ratio). I think next time I’d add more allulose to make them a bit sweeter but they still taste so good.
I’ve never tried baking with allulose but its good to know that works in this recipe!
