This Homemade Strawberry Almond Milk is such a treat! You start off by making almond milk. (Blending soaked almonds and water together).

BUT it has a special addition…the most delicious strawberry syrup made from fresh strawberries!

Have you ever done this?! I’m going to be making fresh strawberry syrup all the time now and adding it to ice-cream, desserts, and nut milks. YUM.

What’s great about this recipe is that it only requires a few ingredients:

  • almonds
  • water
  • vanilla
  • fresh strawberries
  • maple syrup

That’s it! The more natural the better, if you ask me!

How to make it

There are five main steps to making this Homemade Strawberry Almond Milk.

1. Soak the almonds in water for 8-12 hours

  • I usually do this before bed, so that when I wake up the almonds are ready.

2. Make a homemade strawberry syrup

  • Add sliced strawberries, maple syrup, vanilla, and water to a pan and cook until the strawberries are softened and a syrup has formed.
  • Use a fine mesh strainer to strain the syrup into a bowl. There should be 3.5-4 Tbs of strawberry syrup.
  • Keep the strawberry fruit left behind in the strainer

3. Blend the soaked almonds with water and the strawberry fruit left behind from the syrup in a blender.

4. Use a nut milk bag to strain the almond milk

  • Put everything from the blender into a nut milk bag that is in a container of sorts. I love Ellie’s Best Nut Milk Bags, because of how durable and easy to clean they are. They literally look like bags with no holes in them, but they strain almond milk perfectly!

Homemade Strawberry Almond Milk (Paleo, GF)

Servings: 5 cups
Prep Time: 1 hour 10 minutes
Cook Time: 15 minutes

Ingredients

  • 2 cups fresh strawberries, , sliced
  • 1/3 cup maple syrup
  • 2 Tbs water
  • tsp  vanilla extract
  • 1 1/2 cups raw almonds
  • cups  water

Instructions

  • Soak the almonds in water for 8-12 hours.
  • Add 2 cups of sliced strawberries, 1/3 cup maple syrup, 2 Tbs water and 2 tsp vanilla to a pan and cook over medium heat. Mix everything together and then wait until the mixture bubbles to mix again. While the strawberries cook, pay attention to how soft they are. Once the strawberries soften, mash them with a fork or a mashed potato masher. Mix every so often until a syrup forms, this should takes 15-18 minutes total. Then, use a mesh strainer to strain the syrup into a small bowl and set aside. ( There should be about 3.5-4 Tbs of syrup) Put the strawberry remains aside; your going to use those too!
  • Drain the almonds and then put them into a blender.
  • Add 6 cups of water to the blender, along with the strawberry remains, and mix for about a minute ( you may need to mix for more or less time depending on the strength of your blender…).
  • Pour the contents in the blender into a Nut Milk Bag to strain it. Twist & squeeze the bag until all the almond milk is out and the pulp is separated from the milk. I place my nut milk bag into a large glass container and then twist and squeeze the almond milk directly into the glass container.
  • Pour the strained almond milk into a glass container, along with the strawberry syrup (there should be 3.5-4 Tbs ) and mix. Chill in the refrigerator.
  • This recipe should yield about 5 cups of strawberry almond milk.
