These s’mores rice krispie treats are a fun twist on the classic rice krispie treat recipe. Ground graham crackers are added to rice krispie treats, melted chocolate is slathered on top and then more ground graham crackers are sprinkled on top. Delish!
If you love rice krispie treats and s’mores, then you will love these s’mores rice krispie treats! They have the same great texture as regular rice krispie treats, but they are laced with graham cracker flavor and have an added layer of chocolate on top. They are super easy to make and even easier to eat!

Recipe Ingredients
- Crispy rice cereal– you can use any brand of crispy rice cereal that you like.
- Graham crackers– again, you can use any brand that you like. If you want to make your own, try these Gluten-free Graham Crackers from this Vivacious Life.
- Butter– pure butter works great in this recipe. You can also use dairy-free or Vegan butter to make this recipe dairy-free.
- Marshmallows– I like to use Kraft marshmallows because they melt better than other brands. If you are looking for a healthier alternative, try Dandies marshmallows.
- Chocolate chips– I like using semi-sweet chocolate chips, but feel free to use milk chocolate or dark chocolate if you prefer.

Additions/ Substitutions
- To make this recipe dairy-free, use a non dairy or Vegan butter. Also, make sure to use dairy-free chocolate chips.

Step by step instructions
Step 1: Grind up the graham crackers in a food processor. Measure out 1 1/4 cups of crushed up graham crackers.
Step 2: Melt butter in a large sauce pan.
Step 3: Add marshmallows to the pan.
Step 4: Mix the marshmallows into the butter until melted.
Step 5: Add the crispy rice cereal and 1 cup of ground graham crackers to the melted marshmallows.
Step 6: Mix the cereal and ground graham crackers into the melted marshmallows until evenly mixed.
Step 7: Pour the mixture into a pre-greased pan and pat down until there is an even layer.
It is easier to pat the mixture down using a rubber spatula OR to wet your hands a little bit and press down.
Step 8: Melt chocolate in the microwave.
Step 9: Evenly spread out the melted chocolate on top of the rice crispy layer.
Step 10: Sprinkle the remaining 1/4 cup of ground graham crackers on top of the melted chocolate.
Put the pan into the fridge or freezer for only a few minutes to harden the chocolate.
Step 11: Once the chocolate has hardened, cut the rice krispies into squares
Expert tips
- If you don’t have a food processor, you can crush the graham crackers in a blender. Or you can put them into a plastic bag and hit them with a rolling pin.
- To make an even layer of the rice Krispies in a pan, lightly wet your hands and press down on the rice krispies. This way you won’t get any of it sticking to your hands and you can quickly press them down into an even layer.
- To melt the chocolate, add a bit of oil to the microwave proof bowl. Then microwave in 30 second increments, mixing after each increment, to make sure you don’t burn the chocolate.
- To harden the chocolate once it is on the rice krispies, put the whole pan into the fridge or freezer for a few minutes. It is ok if the chocolate isn’t 100% hard, it can be a bit soft.
- Once the rice krispies are done, store the pan of them at room temperature. Don’t keep them in the fridge or they will get too hard.

Yes! You can make these 2 days in advance, since they last for 4-5 days once they are made.
No! This hardens them too much. You only need to put these in the fridge to harden the chocolate more quickly but a soon as the chocolate is hardened, take them out.

S’mores Rice Krispie Treats
Ingredients
- 3 Tablespoons butter
- 1 package JET-PUFFED Marshmallows, (10 ounces, about 40) (or 5 1/2 cups of miniature marshmallows)
- 5 1/2 cups Rice Krispies cereal
- 1 1/4 cups crushed graham crackers, divided
- 2 cups chocolate chips
- 1 teaspoon olive oil
Instructions
- Spray a 12 x 9 inch pan with nonstick spray. I like to use an olive oil spray.
- Crush graham crackers in a food processor until you have 1 1/4 cups crushed graham crackers.
- In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted. Remove from heat.
- Add the rice krispies cereal and 1 cup of the crushed graham crackers to the pan and mix.
- Pour into the pan and pat into an even layer. (It is easier to pat the mixture down using a rubber spatula OR to wet your hands a little bit and press down.)
- Let the rice Krispies treats cool to room temperature, 30 minutes to an hour.
- Put the chocolate into a microwave safe bowl, along with 1 teaspoon of oil. Microwave in 30 second increments until melted. Mix and pour onto the rice krispies, evenly spread along the top. Then sprinkle the remaining 1/4 cup of crumbled gram crackers on top of the melted chocolate.
- Let the chocolate cool, before cutting into squares. Put the pan into the fridge for 10 minutes or into the freezer for a few minutes to let the chocolate harden more quickly. Once the chocolate has hardened, remove the rice Krispies from the fridge or freezer. Keep the pan on the counter at room temperature.
