S'mores Rice Krispie Treats

These s'mores rice krispie treats are a fun twist on the classic rice krispie treat recipe. Ground graham crackers are added to rice krispie treats, melted chocolate is slathered on top and then more ground graham crackers are sprinkled on top.

Ingredients

  • 3 Tablespoons butter
  • 1 package JET-PUFFED Marshmallows (10 ounces, about 40) (or 5 1/2 cups of miniature marshmallows)
  • 5 1/2 cups Rice Krispies cereal
  • 1 1/4 cups crushed graham crackers divided
  • 2 cups chocolate chips
  • 1 teaspoon olive oil

Instructions

  • Spray a 12 x 9 inch pan with nonstick spray. I like to use an olive oil spray.
  • Crush graham crackers in a food processor until you have 1 1/4 cups crushed graham crackers.
  • In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted. Remove from heat.
  • Add the rice krispies cereal and 1 cup of the crushed graham crackers to the pan and mix.
  • Pour into the pan and pat into an even layer. (It is easier to pat the mixture down using a rubber spatula OR to wet your hands a little bit and press down.)
  • Let the rice Krispies treats cool to room temperature, 30 minutes to an hour.
  • Put the chocolate into a microwave safe bowl, along with 1 teaspoon of oil. Microwave in 30 second increments until melted. Mix and pour onto the rice krispies, evenly spread along the top. Then sprinkle the remaining 1/4 cup of crumbled gram crackers on top of the melted chocolate.
  • Let the chocolate cool, before cutting into squares. Put the pan into the fridge for 10 minutes or into the freezer for a few minutes to let the chocolate harden more quickly. Once the chocolate has hardened, remove the rice Krispies from the fridge or freezer. Keep the pan on the counter at room temperature.
