This sweet potato juice with carrots, mango and pineapple is full of beta-carotene and comes together quickly with a juicer.

Every time I come across a new juice discovery, I feel like I need to share it so that everyone can experience it too. Which is why I’m sharing this juice recipe. It is a delicious, refreshing, and beta-carotene packed drink ( thanks to the sweet potato and carrots) that you’ll want to make again and again.

All you need is a juicer or juice extractor and you are good to go. I love using a juicer because you get to drink fruits and veggies in their raw state, which gives you the added benefit of immediate nourishment.   • Sweet potato- a medium sized one works great here.
  • Pineapple- pre-cut or cut by you.
  • Carrots- large sized carrots work best here.
  • Mango- make sure it is ripe for the best flavor.
  • Lemon- a sliver of lemon adds a nice kick to the flavor.

Step by step instructions

  • Prepare all of your veggies to fit into your juicer/ juice extractor.
  • Peel your mango. Cut the carrots and sweet potato into smaller pieces. Also cut your pineapple.
  • Juice according the instructions on your juicer.

Can you make this juice in advance?

It is best to drink the juice you make immediately to get the most nutritional benefit. If you need to make it in advance, make sure to put it into an airtight container and refrigerate. Drink it within a few hours of making.

Do you have to peel the mango?

It depends on your juicer. Normally no, but I like to do it to make it easier.

How do you make this drink more or less sweet?

To make it more sweet, use more mango. To make it less sweet, add more lemon.

Beta-Carotene Carrot Mango Sweet Potato Juice

Ingredients 

  • 1 medium mango
  • 4 pineapple rounds, one inch thick
  • 1 medium sweet potato
  • 5 large carrots
  • a small slice of lemon

Instructions 

  • Wash and dry the mango, sweet potato, and carrots.
  • Cut the outer peel off of the mango. Slice as much of the meat off the of the mango seed as you can. Cut the sweet potato into smaller pieces.
  • Juice all of the fruit and vegetables in a juicer.
  • Yields 30 ounces of juice.

  1. Hello Dominique, I tried this recipe and it was delicious! SInce I don’t have a juicer, but do have a Vitamix blender, I adapted your recipe. I put the sweet potato slices and baby carrots into a small saucepan with just enough mango juice to cover, brought to a boil, then reduced to simmer until just softened (about 20 minutes). I then let the vegetables cool. To the blender I added the cooked vegetables with some of the juice, pineapple slices and frozen mango chunks (that I had on hand). I also added 2-3 tblsp of goji berries (since I had those on hand too). Added a little more mango juice to help the blending process. Blended until smooth, about 1 minute. Teen and dog tested; both liked! I cooked extra vegetables, so I refrigerated the remaining and will have another smoothie tomorrow.
    I think next time I make this, I’ll try diluting the juice with some water as this smoothie was a little too sweet for my taste. Thanks for a new recipe!
