A healthy vitamin-filled juice recipe made of green apple, cucumber, kale, ginger, fennel, grapefruit, and lemon.

When I want a heavy dose of easy to digest vitamins, I juice. Juicing is one of my favorite healthy habits because it just makes me feel SO good. I make my Strawberry, Beet and Carrot Juice, Carrot Kale Apple Juice with Parsley, and Grape Citrus Fennel Juice regularly.

And when I’m in the mood for a green juice, I make this one with apple, kale, cucumber, fennel, and ginger. It is delicious, refreshing, sweet, earthy, and also tart all at the same time.

Why this recipe is great

  • It is a great way to use up cucumber and kale in a green juice.
  • It has a nice kick from the ginger and lemon.
  • It has a hint of sweetness from the apple, fennel, and grapefruit.
  • It is an easy way to get a lot of vitamins in a cup.

Recipe ingredients

  • Green apples– Granny smith green apples work great for this juice.
  • Fennel– a fresh bulb is what I used here. You don’t need the long fronds and stalks.
  • Grapefruit– this adds a lovely flavor to the juice.
  • Cucumber– I like using English cucumbers. If you like cucumbers try my pickled cucumber recipe.
  • Kale– I like using Tuscan Kale because it is softer, but you can use any kind of kale here.
  • Lemon– this compliments the other flavors well.
  • Ginger– fresh ginger adds a zing here.

Instructions

Step 1: Wash all the fruit and vegetables.

Step 2: Remove the peel from the grapefruit and lemon. This ensures the juice isn’t too tart.

Step 3: Chop your kale if you didn’t buy it pre-chopped.

Step 4: Cut the cucumber, fennel, and apple into sizes that fit your juicer. Make sure all of the fruit and veggies fit your jucier.

Step 5: Put the fruits and veggies into your juicer. Serve!

Equipment

Ingredients 

  • 2 green apples, ( I used Granny Smith)
  • ½ bulb of fennel
  • 1 grapefruit, peeled
  • 1 cucumber
  • 3 cups chopped kale
  • ½ lemon, peeled
  • 1 inch piece fresh ginger

Instructions 

  • Wash and cut all of the vegetables to fit into your juicer. ( I use a WaringPro juicer). Juice all of the veggies, then mix the juice together with a spoon.
  • Makes 32 ounces of juice.

Notes

  • You can use any kind of apple that you have on hand.
  • Make sure to remove the peel of both the grapefruit and the lemon before juicing so that the juice isn’t too tart.
