Say hello to your new favorite kale salad… French Kale Salad à la Moutarde! A simple yet tasty superfood recipe that is both delicious and really easy to make.
I’m serious, all you need is 7 ingredients to make this provencal inspired salad, including the dressing! And the result is a crunchy, satisfying kale salad with a kick.
This salad is made in 2 steps.
Step 1: chop some fresh kale.
Step 2: make your own French style mustard dressing (recipe listed below).
Okay, maybe there is a 3rd step.
Step 3: eat delicious salad. 🙂
I discovered this French Kale Salad à la Moutarde while I was home for the holidays.
My mom had asked me to make a salad and some salad dressing to accompany one of our family meals. (I’m the official salad dressing maker at my parent’s home 🙂 ). I inquired upon what kind of salad she wanted me to make and she mentioned a kale salad with mustard dressing.
I was a bit hesitant at first because kale can be a bit bitter and a bit too crunchy (sometimes in a dry way) for what I imagine a salad’s texture to be like. But my mom insisted that with a mustard vinaigrette, that it was really delicious combination.
And she was so right! The magical mustard dressing here transforms the chopped kale into a FANTASTIC crunchy salad full of herb de provence and spicy mustard flavor.
There is no bitter or dry kale here! Just some glistening (in dressing) salad ready to be eaten.
Add some baked chicken tenders and you have yourself a complete meal!
You’ll find yourself going back for seconds… and thirds.
Which is not a bad thing to be having more of after the holidays. 🙂
French Kale Salad à la Moutarde (Paleo, GF)
Ingredients
- 7 heaping cups of chopped kale
- 4 Tbs olive oil (extra light)
- 1 Tbs tarragon vinegar (or apple cider vinegar)
- 1 Tbs mustard (old fashioned seed style Dijon mustard)
- 1/4 tsp Himalayan salt (you can add more later to taste)
- 1-4- 1/2 tsp ground black pepper (I like 1/2 tsp for more kick)
- 1/2 tsp Herbes de Provence
Instructions
- In a small bowl, mix together the olive oil, vinegar, mustard, salt, pepper and herbs de provence. Mix it all with a fork or whisk until the dressing thickens.
- Place the chopped kale into a large bowl and cover with the dressing.
- Mix well until all of the kale is glistening with the dressing.
