Healthy Coleslaw with Blueberries and Chia Seeds (Paleo, Dairy-free)
Ingredients
- 6 cups coleslaw mix ( shredded cabbage and carrots), ( I used a 9 ounce coleslaw mix bag)
- 1/3 cup mayonnaise
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons honey
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper to taste
- 2 Tablespoons chia seeds
- 1/2 cup blueberries
Instructions
- Put the shredded cabbage and carrots into a large bowl.
- In another smaller bowl, mix the mayonnaise, apple cider vinegar, honey, dijon mustard, salt and pepper together with a fork. Mix until the dressing is smooth. (note: taste it at this point and add more honey if you want it to be sweeter or more vinegar if you want more of a vinegar taste)
- Pour the dressing on top of the shredded cabbage and carrots and mix. Then, put the chia seeds on top and mix. Fold in the blueberries.
- You can serve this coleslaw immediately ( it will be nice and crunchy). However, if you leave it in the fridge for a few hours- to overnight, all of the flavors seep into the cabbage and the cabbage becomes a bit less crunchy and a bit more flavorful.
Notes
- Instead of honey, you can use maple syrup.
- You can use a Vegan mayo, if you want this recipe to be Vegan. Just omit the honey and use maple syrup as well.
- You can use Paleo mayo or make your own mayo, if you want this recipe to be Paleo.
- You can omit the chia seeds if you don’t want this in the recipe.
- Instead of blueberries, you can use diced apples.
