This recipe calls for 3 bananas, but if you only have 2, thats ok! Use 2 bananas and add 1/2 cup of apple sauce. I’ve done this and the recipe works great.
Cover and keep at room temperature for 2-3 days.
I like to eat it with almond butter or grass fed butter on top.

I made it with extra virgin olive oil, is that ok? It was delish. Also, do we have any nutritional content for this?
oh yes I usually use extra virgin olive oil! I’m glad you like it! I don’t have nutritional content up but I’ll do it soon! 🙂
Why olive oil? DOesn’t this affect the taste?
I love baking with olive oil! It works so well in banana bread. I don’t taste it; just make sure to use an extra light olive oil that is light in color. 🙂
I could definitely have banana bread for breakfast every day. It’s so tasty! I’m really impressed with the tempting crumb you’d got on this dairy and grain free version. Looks great.
Banana bread is one my fave things to eat! Your recipe sounds amazing! Will have to give it a try.
