I’m sharing a simple yet amazing salad recipe today that has been a regular go-to salad of mine for years now.

This Balsamic Tomato, Cucumber, and Avocado Salad is made with only three veggies… as the name suggests. Fresh tomatoes, cucumber, and avocado are mixed together and topped in a homemade balsamic dressing that is seasoned with basil and herbes de provence. Then there is an optional step of adding some crumbled goat cheese, but this can be left out to keep the recipe Paleo and dairy-free.

I eat this salad ALLLL the time. It’s what I make when I want lots of vitamins and flavor but am feeling lazy… because all you need to do is slice up your veggies, and make the dressing. All of which takes 5 to 10 minutes max.

The dressing really makes all the flavors pop here. I love the sweetness that the balsamic adds to the salad, and I especially love the taste of the dried basil and herbes provence inside. The seasoning dresses the salad up a bit, adding a bit of French and Italian flair.

What I love the most, though, is how good I feel when I eat this salad.

It’s like all the vitamins hit me at once and my body is given life again. Seriously!

This is exactly how I felt when I recently made this Balsamic Tomato, Cucumber, and Avocado Salad during Hurricane Irma.

Quick side note: my family and I are doing fine and really lucked out with this hurricane. We are on the east coast of South Florida and the storm didn’t hit us as hard as many other places. We had no structural damage, minor storm surge, and a few trees that fell over. We did lose power, but it came back quickly, and we feel lucky about that because a lot of people in our town still don’t have it. As soon as our power was fixed, though, our wifi went out, and we still do not have that. So I am currently blogging from Buffalo Wild Wings, the only place in my town that is open and has working wifi.

Anyways, back to this Balsamic Tomato, Cucumber, and Avocado Salad. It’s super simple and I have been making it for years, so I didn’t think to share it.

Sometimes I don’t think to share the foods that I make all the time because to me it’s nothing special. Even though I love it so much.

However, when I made this salad during the storm my father looked at it and said, “ well this looks interesting”, as if it was this strange new concoction. Haha

That made me think that maybe not everyone would see this as their normal every day simple salad the way that I do.

Everyone in my family loved this salad and kept raving about it, which again got me thinking that maybe I need to share this on the blog.

So now that we cleaned up the yard and everything is almost back to normal, I made the salad again to share with you guys.

I’m hoping to get wifi back soon and for the grocery stores to open so that I can get back to experimenting in the kitchen!

Balsamic Tomato, Cucumber, and Avocado Salad { Paleo option, GF}

Ingredients

  • 2 cups san marzano or cherry tomatoes, , sliced in half
  • 2 cups sliced cucumbers
  • 1 avocado, sliced
  • 2 ounces goat cheese , ( optional, omit to keep Paleo)
  • 6 Tbs olive oil
  • 4 Tbs balsamic vinegar
  • 1/8 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp herbes de provence
  • 1/2 tsp dried basil

Instructions

  • Place the sliced tomatoes, cucumber and avocado into a large bowl.
  • Make the dressing in a small bowl. Add the olive oil, balsamic vinegar, salt, pepper, herbes de provence and dried basil. Mix well until the mixture thickens.
  • Pour some of the dressing on top of the veggies. ( Note: you will have extra dressing) I like using about 3/4 of the dressing for the salad, but feel free to use as much or as little as you like.
  • Mix all the veggies and the dressing together. 
  • Optional step: add goat cheese to the salad and mix again. Omit goat cheese to keep this recipe dairy-free and Paleo.
