This Paleo banana bread is filled with chocolate chips and sunflower butter swirls. It is also made with healthier for you ingredients like almond flour, tapioca flour, coconut sugar, and olive oil. What makes this recipe great

Sunflower seed butter is considered an allergy friendly food because it is free of peanuts, tree nuts, soy, milk, eggs, wheat, fish, and crustacean shellfish. AKA the top 8 most common allergies. (Make sure the company you buy it from guarantees this)

It is a great “peanut butter” alternative for those who are allergic, like myself. I’m actually allergic to all nuts except for almonds, which is why you won’t see any recipes with other nuts here.

Recipe ingredients

Ingredients needed to make paleo chocolate chip banana bread with sunflower butter.
  • olive oil– or avocado oil.
  • coconut sugar– or maple sugar or brown sugar ( brown sugar is not Paleo).
  • eggs– make sure to use large eggs.
  • vanilla– this gives a nice flavor to the bread.
  • bananas– make sure they are ripe!
  • almond flour– blanched almond flour is best because it is more refined in texture.
  • tapioca flour– this is a great gluten-free flour to use in baking.
  • coconut flour– this mixes with almond flour and tapioca flour well.
  • baking soda– this helps the banana bread to rise.
  • cinnamon– this works well to enhance flavors.
  • sunflower seed butter– use your favorite brand.
  • dairy-free chocolate chipsEnjoy LifeTrader Joes, or Hu chocolate  brands are all dairy-free and gluten-free. Hu chocolate is Paleo.

Keep the banana bread at room temperature on the counter and covered for 3 days. You can also refrigerate it for 5-6 days.

Paleo Banana Bread with Sunflower Butter and Chocolate Chips (Gluten-free)

Ingredients 

Instructions 

  • Preheat oven to 350 degrees F. Grease a 9 in x 5 in loaf pan and line with parchment paper.
  • In a large bowl, mix the olive oil and coconut sugar with a fork or whisk. Add the eggs, vanilla, and mashed bananas and whisk again until well mixed.
  • In another bowl, combine the almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon. Mix with a fork until blended.
  • Pour the bowl of dry ingredients into the bowl of wet ingredients and mix until just combined. Fold in chocolate chips.
  • Pour 1/2 of the banana bread batter into the loaf pan. Drizzle with 2 Tbs sunflower seed butter. Then, add the other 1/2 of batter on top of that and drizzle with 2 Tbs sunflower seed butter. Use a knife to make swirls with the sunflower seed butter.
  • Bake for 50-55 minutes, until golden brown and a toothpick comes out mostly clean.
