Delicious homemade popsicles made with fresh strawberries, and frozen matcha late.

I’ve been meaning to share the recipe for these Strawberry Matcha Popsicles. Especially since it’s the middle of summer and especially because these are so delicious! What makes this recipe great

  • There are alternating layers of fresh pureed strawberries and matcha green tea latte, and the combo compliments each other.
  • There isn’t too much sweetener inside.
  • They are naturally gluten-free and dairy-free.
  • There are only 40 calories a popsicle.
  • It is a fun way to incorporate matcha into your diet. I have made this Iced Almond Milk Matcha Latte every single day of summer.

Recipe ingredients

  • Strawberries
  • Matcha powder
  • Honey
  • Almond milk
  • Water

Step by step instructions

Step 1: Set aside 3-4 strawberries so that you can slice them and stick them to the side of your popsicle molds. This makes for a really pretty looking popsicle after everything freezes.

Step 2: Then put the rest of your strawberries into a food processor and mix until a nice puree forms.

Step 3: Make your matcha latte! Mix together 1 tsp of matcha green tea powder with water, honey and almond milk. Kiss me Organics is my all time favorite brand of matcha powder… the quality is great and thus it just tastes so good!

Step 4: Pour a little bit of the strawberry puree into all the popsicle molds, and then add a little bit of the matcha latte. Keep alternating layers until the popsicle molds are full.

Step 5: Lastly, all you have to do is freeze the popsicles for 4 hours and you are done!

Ingredients

Instructions 

  • Cut the tops of the strawberries off with a knife. Set aside 3-4 strawberries. Slice them and stick the slices onto the insides of the popsicle molds.
  • Blend the rest of the strawberries in a food processor, until it purees. Set aside.
  • In a medium bowl, mix 1 tsp of matcha powder with 3 Tbs of hot water. Mix until the green tea powder has mixed well into the water.  Add 1 Tbs honey to the water and mix with a fork, until the honey has dissolved into the water. Add 3/4 cup of almond milk and mix.
  • Pour some puree into molds ( I put 2 Tbs into the molds), then add some of the matcha mixture to the molds, then add more of the puree. Repeat this until the molds are full.
  • Top each popsicle mold with the popsicle sticks. 
  • Freeze for at least 4 hours.
