  • Romaine hearts– I like finding large ones because these hold more chicken salad.
  • Mayonnaise– use your favorite brand or whatever fits your dietary needs.
  • Grapes– both purple and green grapes work great here.
  • Dijon mustard– You can use any type of mustard that has a good “tang” like dijon does.
  • Apple cider vinegar– this is used to mix into the mayonnaise dressing. White wine vinegar works as well.
  • Apples– any apple of your choice works here.
  • Raisins– any type of raisin of your choice.

Additions/ Substitutions

  • You can add celery to the chicken salad.
  • You can add bell peppers or carrots as well.
  • You can omit the apples, grapes or raisins if don’t like them.

Step 1: Remove the chicken from the chicken carcass. Cut into bite sized pieces.

Step 2: Make the mayonnaise mixture. Mix the mayo, mustard, apple cider vinegar, salt and pepper together.

Step 4: Add the grapes, apples and raisins to the chicken salad and mix again.

  • This recipe calls for one whole rotisserie chicken. If you want to make this recipe with rotisserie chicken leftovers, just half the recipe.

Ingredients 

  • romaine lettuce hearts, (for the wraps)
  • 4 cups diced organic rotisserie chicken, (this was from 1 organic rotisserie chicken for me)
  • 4 Tablespoons mayonnaise , (you can add more if you want it more creamy)
  • 1 teaspoon dijon mustard
  • 1 Tablespoon apple cider vinegar
  • salt and pepper to taste
  • 1 cup diced apples
  • 1/2 cup raisins
  • 1 cup diced grapes

Instructions 

  • Cut the rotisserie chicken into bite sized pieces and place into a large bowl. You should have about 4 cups of diced chicken from 1 whole rotisserie chicken.
  • In a small bowl, mix the mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper together. Pour the mixture on top of the chicken and mix well.
  • Then, add the diced apples, sliced grapes and raisins to the chicken salad and mix.
  • Then put the chicken salad into wraps and top with toppings of your choice.
  • This should serve 4-6 people.
