It’s always been hard for me to turn down a good chicken salad. Especially when there’s added apples, grapes and raisins inside. And especially when it’s made with rotisserie chicken mixed with a Dijon mayo.

Nope, I can’t turn this Rotisserie Chicken Salad Wraps with Apples, Raisins and Grapes down. Good thing they are Paleo, Whole30 compliant, GF, easy to make, and super easy to bring to school/work!

I was inspired to make this Rotisserie Chicken Salad Wrap recipe based on a sandwich that I frequently order from a café called Osceola Street Café.

The sandwich is called a Mckintosh chicken salad and it’s basically chunks of fresh chicken with mayo, raisins and apples, and it is SO good.

I was in the mood for chicken salad the other day and the idea to make my own version of this salad came to mind.

However, I didn’t want to cook any chicken to do this.

So I bought an organic rotisserie chicken, which tastes AMAZING in chicken salad, and started cutting it into bite sized pieces.

Ingredients needed to make these Rotisserie Chicken Salad Wraps:

  • a rotisserie chicken
  • romaine lettuce
  • mayonaise
  • grapes
  • dijon mustard
  • apple cider vinegar
  • apples
  • raisins

Seriously though, using rotisserie chicken to make chicken salad is the way to go. Not only is it easy, but it also just tastes great. If you haven’t tried this, you need to!

How to make these Rotisserie Chicken Salad Wraps:

1 organic rotisserie chicken yielded 4 cups of diced chicken for me and I put all of the diced chicken into a large bowl.

Then I made my own mayo mixture. I mixed Paleo mayonnaise ( I like Primal Kitchen’s Avocado Oil Mayo ), with Dijon mustard, apple cider vinegar, and salt and pepper.

Adding the mustard and apple cider vinegar adds a nice spice and kick to the mayo.

After that, I mixed the mayo mixture into the chicken.

Then, I added apples, raisins and grapes to the chicken salad and mixed.

I added grapes to this recipe because I like the added crunch and sweetness that they add.

Then I took the Rotisserie Chicken Salad with Apples, Raisins and Grapes and put it into wraps!

I used romaine lettuce to make the wraps, though I also love using Butter lettuce. I just couldn’t find any at my grocery store.

I topped my wraps with sliced tomatoes and shredded carrots because I found those flavors to compliment the chicken salad wraps well. I also sprinkled them with bee pollen. But feel free to add any topping of your choosing!

I think bacon would taste great.

Yuuum!! These are great to bring to work or to school.

I like putting the chicken salad into Tupperware and then bringing the lettuce wraps on the side and making them fresh on the spot.

Rotisserie Chicken Salad Wraps with Apples, Raisins and Grapes { Paleo, Whole30}

Ingredients

  • romaine lettuce, (for the wraps)
  • 4 cups diced organic rotisserie chicken, (this was from 1 organic rotisserie chicken for me)
  • 4-6 Tbs Paleo mayonnaise , (depends on how much you want)
  • 1 tsp dijon mustard
  • 1 Tbs apple cider vinegar
  • salt and pepper to taste
  • 1 cup diced apples
  • 1/2 cup raisins
  • 1 cup sliced grapes

Instructions

  • Cut rotisserie chicken into bite sized pieces and place into a large bowl. This should yield about 4 cups of diced chicken.
  • In a small bowl, mix the Paleo mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper together. Pour into the diced chicken and mix well.
  • Then, add the diced apples, sliced grapes and raisins to the chicken salad and mix.
  • Then put the chicken salad into wraps and top with toppings of your choice. I like shredded carrots and sliced tomatoes.
  • Should serve 4-6 people, depending on serving size.
