Grain-free Gingerbread Banana Bread (Paleo, GF)
I have one last gingerbread recipe that I wanted to sneak in before Christmas… I did warn you that I was obsessed with gingerbread lately. 🙂
This Grain-free Gingerbread Banana Bread is a light and fluffy banana bread seasoned with molasses, ginger, cloves, cinnamon, and nutmeg. It smells just AMAZING as it cooks and it tastes just as good, all while being Paleo, Gluten-free, Grain-free, and Dairy-free.
Is there really anything better than ginger, cinnamon, cloves, nutmeg, and molasses all together?? Especially this time of year.
The smell alone makes me think of the holidays, and it instantly warms up the kitchen.
I like this Grain-free Gingerbread Banana Bread because it takes a classic recipe that I love… banana bread… and dresses it up a bit. Makes it more festive.
And more importantly, it makes it ok to have gingerbread for breakfast 🙂
Not that there is anything wrong with having gingerbread for breakfast or dessert for breakfast that is. I have had cookies for breakfast for the last two days, so I can’t talk. I blame Christmas.
However, there’s something just so satisfying about warm banana bread in the morning… with a nice cup of tea or coffee.
It’s really the best.
And it’s really this best right now when it also tastes like gingerbread goodness. Thick gingerbread cake goodness…. you know what I’m talking about it.
I decided to sprinkle mine with some melted dairy-free chocolate. And if you want to do that too, just melt some dairy-free chocolate ( I like Enjoy-life chocolate chips), with some coconut oil and then sprinkle away!
You will not be dissapointed.
This Grain-free Gingerbread Banana Bread would be great to bring to a holiday party, or to a loved ones house, or even to be given as a gift.
I love receiving baked goods as gifts and extra points if they are grain-free, gluten-free, and paleo.
One last thing… don’t be alarmed if you eat more than one piece in one sitting. It’s hard to stop once you start… I’m not on slice 3. Woops!

Grain-free Gingerbread Banana Bread (Paleo, GF)
Ingredients
- 1 cup mashed bananas ( this was from 2 very ripe bananas for me)
- 2 Tbs coconut oil , melted
- 1 Tbs olive oil
- ¼ cup blackstrap molasses
- ¼ cup maple syrup
- 1 large egg
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ½ tsp salt
- 1 ¼ cup almond flour
- ¼ cup tapioca flour
Instructions
- Preheat oven to 350 degrees (F). Grease a loaf tin and line with parchment paper. ( I used a 4″ x 8.5″ medium loaf pan)
- Mix the mashed bananas with the melted coconut oil, olive oil and blackstrap molasses until mixed and the mixture has thickened. Then add the maple syrup and egg and mix until smooth.
- Add the baking soda, ground ginger, cinnamon, ground nutmeg, ground cloves, and salt to the mixture and mix. Then add the almond flour and tapioca flour and mix well.
- Pour the batter into the loaf tin and then bake for 55- 60 minutes. Remove from the pan and then cool on rack.
