Broiled Salmon with Apple Cranberry Compote (Paleo, GF)
Broiling salmon has been my new favorite way to cook it! Besides the fact that broiling salmon only takes 8-10 minutes to cook, the result is a fillet of salmon that is crispy on the outside and perfectly flakey on the inside. YUM.
This Broiled Salmon with Apple Cranberry Compote recipe takes broiling salmon to a whole new level because it has the added flavor kick of a homemade apple cranberry compote. Plus, it’s Paleo, Whole30, grain-free, and clean, without sacrificing any flavor… which is key for me.
Since I started the Whole30 over the weekend, I will be posting lots of delicious Whole30 recipes over the next month.
To be honest, it’s not all that different from regular Paleo.
However, where I probably would have put some honey in the apple cranberry compote, I resisted now that I’m doing the Whole30. (Because you have to avoid natural and unnatural sugars) And it tasted great!
My body could go for less natural sugars for 30 days. Especially with the massive sweet tooth that I have.
Anyways, the Whole30 hasn’t been too hard so far (I’m on day 3… so maybe ask me in 10 or 20 days)… however with meals like this Broiled Salmon with Apple Cranberry Compote, it seems totally doable.
Although breakfast, on the other hand, is going to be a bit more complicated… how many eggs can one eat?!
At least, I have lots of ideas for Whole 30 lunches and dinners. 🙂

The apple cranberry compote here is so simple to make!
All you need is fresh cranberries, fresh orange juice, and diced apples.
Then you cook them until a a tart yet sweet compote results, which pairs well with the salmon.
Plus, as I said, the salmon cooks quickly.
The first few times I made it, I had the oven rack set too high in the oven, and this would cause my fire alarm to go off (sorry neighbors), but then I put the oven rack in the middle and it worked great.
I would still keep an eye on your salmon though because each oven is different.
Mine broils at 500 degrees, yet my old oven broiled at 550 degrees.
One more thing to note, the skin peels off the salmon easily after it has been broiled. Which is great.

Broiled Salmon with Apple Cranberry Compote (Paleo, GF)
Ingredients
- 7.5 ounces (2 cups) of fresh cranberries
- ½ cup fresh orange juice scant, (this was the juice of 1 orange for me)
- 1 cup of diced apples ( this was 1 apple for me)
- a few splashes of olive oil
- 1- 1.25 lb of salmon ( cut into 4 pieces)
- 1 Tbs of lemon juice
- salt to taste
- pepper to taste
Instructions
- Combine the fresh cranberries, orange juice, and diced apples in a medium saucepan. Heat over medium-high heat until the liquid is boiling. Reduce the heat to medium-low and simmer for 20 minutes, mixing every so often.
- Set the oven to broil.
- While the oven is heating, cover a cookie sheet with aluminum foil, and top it with a splash of olive oil. Put the salmon, skin-down onto the cookie sheet. Top the salmon with a splash of olive oil, the 1 Tbs of lemon juice, and salt and pepper to taste.
- Broil the salmon for 8-10 minutes, until the salmon flakes easily with a fork.
- Top each piece with the apple cranberry compote.
