I’m all about making fancy breakfasts at home. From delicious Paleo pancakes, to savory quiche lorraine, or zucchini egg muffins, it is always a treat to make a gourmet breakfast at home.

And these chocolate cherry waffles fit the fancy breakfast bill. Not only are they filled with chocolate and cherry flavor, but they are also topped in a cherry compote. All while being Paleo, dairy-free, and gluten-free.

Why this recipe works

  • These waffles are a fun twist on classic waffles.
  • They are perfect for the chocolate cherry lover in your life.
  • They are great for those following a Paleo, Gluten-free, Dairy-free or Grain-free diet.
  • They are allergy friendly.

Recipe ingredients

  • Cherries– fresh cherries work best here because you are cutting them up into pieces.
  • Honey– raw organic honey works great here.
  • Lemon juice– fresh squeezed or store bought.
  • Eggs– these help bind the waffles together.
  • Olive oil– any kind of olive oil works. This helps make the waffles crispy.
  • Almond milk– make sure there are no added flavors or sweeteners.
  • Maple syrup– you can use your favorite maple syrup here.
  • Almond flour– make sure to use blanched almond flour because it is more refined in texture.
  • Tapioca flour– this helps give a good texture to gluten-free baked goods.
  • Arrowroot flour– this also helps give a good texture to gluten-free baked goods.
  • Coconut flour– this is very absorbent so don’t use more than the recipe calls for.
  • Cocoa powder– make sure the cocoa powder is unsweetened.
  • Chocolate chipsHU chocolate is both dairy-free and Paleo.

See recipe card below for a full list of ingredients and measurements.

Instructions

Make the cherry compote.

  • Put 3 cups of sliced and pitted cherries, 2 tsp honey, and 2 tsp lemon juice into a pan and heat over medium to medium-high heat and let boil for about 10 mins. Set aside.

Next, make the waffle batter.

  • In a large bowl, put the 1 cup of diced cherries, eggs, olive oil, unsweetened almond milk, maple syrup and vanilla into a bowl and mix with handheld electric mixer until well mixed and bubbly in texture— about 1.5 minutes on the highest speed setting.
  • In another large bowl, mix the almond flour, tapioca flour, arrowroot flour, coconut flour, baking soda, and cocoa powder together with a fork.
  • Pour the dry ingredients into the bowl of wet ingredients and mix with a fork. Fold in the chocolate chips.
  • Then, spray oil onto your waffle maker and preheat it until it is ready to be used. ( I set my waffle maker setting to 5 out of 7 heat)
  • Pour the waffle batter into your waffle maker (I used a Villaware Belgian Waffler). Cook until the waffle is golden brown in color and crisp on the outside. Repeat with the remaining batter.
  • This recipe yields 9 waffle squares that are 5 inches long per side. This would be good for about 5-7 people.

Notes

  • Cook your waffles according to the instructions on your waffle maker. I love this Villaware waffle maker.
  • Serve warm with cherry compote, almond butter, chocolate chips and maple syrup on top.
  • Store leftovers on the counter in an airtight container for 3 days.
