Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing
I made this Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing for a family dinner recently and it was quite a hit!
The Garlic Caper dressing has got a caesar-esque vibe to it, and the shredded brussels sprouts and kale add a nice healthy crunch and flavor to the whole salad. It’s a really refreshing, nutrition-filled salad that makes for a wonderful side-salad.
My brother recently told me about a delicious shredded brussels sprouts Caesar salad that he ate at a restaurant and the idea of making a salad like that stuck in my mind for a few weeks.
So I made this Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing and now I’m hooked!
At first, I wasn’t exactly sure how to shred brussels sprouts. Do I get a cheese grater and do it by hand? This sounded tedious and painful.
So I did a bit of internet research and found that you can just put your brussels sprouts into a food processor and they shred that way.
SO easy.
I would recommend doing about 4 ounces of brussels sprouts at a time so that they all shred, but if you have a bigger food processor I’m sure you can do more at a time.
To make the chopped kale, I just ripped the kale into small pieces by hand because I found this was easiest, but feel free to chop the kale however you want.
Though, don’t put it into the food processor. I tried that and it just turns into minced kale. haha
As for the dressing, I basically used my Paleo Caesar Salad-Like Dressing and added capers to it. I put all of the ingredients into a food processor and mixed it until the dressing was super creamy.
( Side note: use canned coconut cream without any preservatives for the best flavor. I like Savoy coconut cream. It’s the best 🙂 )
So there is a Caesar salad vibe to the dressing here but it doesn’t taste enough like it for me to put it into the name of the salad.
It really is more like a really creamy lemony Garlic Caper Dressing and it’s delicious! The flavors are quite refreshing.
I topped mine with bee pollen, parmesan cheese ( which is optional), and extra cracked black pepper. Soooo good.
This Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing is really versatile in that it would taste great with so many other additions.
Like olives.
Or chicken.
Or carrots.
The list could go on…

Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing
Ingredients
Garlic Caper Dressing ingredients:
- 3 tsp minced garlic ( this was from 3 cloves for me)
- 2 tsp dijon mustard
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 Tbs apple cider vinegar
- 3 Tbs canned coconut cream ( without preservatives)
- 1 tsp honey
- a pinch of nutmeg
- 1 Tbs olive oil
- 2 tsp capers
Salad ingredients:
- 5 cups shaved brussels sprouts ( this was 16 ounces of brussels sprouts shaved in a food processor for me)
- 6 cups chopped kale ( this was from 6 large leaves of Kale for me)
- 2 Tbs capers
- 1/2 cup shredded parmesean ( optional- do not add if keeping the salad Paleo)
- a dash of bee pollen optional
Instructions
- Put all of the Garlic Caper Dressing ingredients into a food processor and mix until the dressing is well mixed and creamy. Set aside.
- Put the shaved brussels sprouts and chopped kale into a large bowl. You can buy shaved brussels sprouts or make your own by mixing brussels sprouts in a food processor.
- Add 2 Tbs of capers, 1/2 cup of shredded parmesan (optional), a dash of bee pollen, and all of the Garlic Caper Dressing to the salad and mix.
- This salad should serve 4-6 side salads.

I’ve nev er heard of fake brussell sprouts but this sounds so delicious.
