Key Lime Mustard Balsamic Dressing {Paleo, GF}
This Key Lime Mustard Balsamic Dressing has been on my regular rotation all summer. It’s got a great citrusy sour flavor from the key limes, a dijon mustard kick, a sweet balsamic overtone, and a lovely lavender essence from the herbes de provence.
It’s basically summer in dressing form and I just love it!
I randomly came up with this Key Lime Mustard Balsamic Dressing one evening when I needed some dressing for a salad. I saw a big bowl of key limes on the counter and figured why not add them.
My parents have a key lime tree in the front of their yard and so I have access to an abundance of them in the summertime.
This is awesome because key lime works so well for summer recipes… like key lime pie or key lime chicken. (sooo good)
I had never used key limes in salad dressing before and I was surprised by how well it worked.
I’m not sure why I was thaaaat surprised since lemon is amazing in salad dressings lol.
Maybe I was more surprised by how well key lime, dijon mustard, balsamic vinegar, and herbes do provence went together.
Either way, I continued making this dressing over and over and over, so I figured why not share it here?!
Especially because it works so well to dress up any salad no matter how plain.
Which is great because sometimes I just put spinach or kale on a plate and call it a day.
And especially because key limes are still in season! It’s still summer for a little while longer and I want to enjoy summer dishes, fruits and veggies while I can. 🙂
Though, I have to be honest… I am always SO excited to get in the Fall spirit and to start stocking up on pumpkin puree.

I also prepared recipes to post while I’m gone, so my posts will still continue, but I may be a bit slow at answering emails etc.

Key Lime Mustard Balsamic Dressing {Paleo, GF}
Ingredients
- 4 Tbs key lime juice ( this came from 3 key limes for me)
- 2 tsp dijon mustard
- 2 Tbs balsamic vinegar
- 6 Tbs olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp herbes de provence
Instructions
- Put all of the ingredients into a bowl and mix with a fork OR put all of the ingredients into a tupperware and shake.
- Yields 5 ounces of dressing.
