Gluten-Free Pumpkin Collagen Oatmeal
Gluten-Free Pumpkin Collagen Oatmeal recipe. A healthy easy breakfast recipe that is fiber-rich and protein-packed and tastes like pumpkin pie but in healthy oatmeal form! It’s got a creamy pumpkin-y flavor and lots of festive Fall spices.
I can’t even tell you how many times that I’ve had this Gluten-Free Pumpkin Collagen Oatmeal in the last month!
It has the most delightful creamy pumpkin flavor, with lots of festive Fall spices. It’s like pumpkin pie, but in healthy stovetop pumpkin oatmeal form!
I know it may not sound healthy, but it is! There’s a lot of fiber in this recipe thanks to the pumpkin puree and the rolled oats, and there is also extra protein thanks to the collagen peptides inside.
I’m all about unique tasting healthy oatmeal creations.
I’ll take a yummy bowl of warm creamy oatmeal that tastes like pumpkin pie any day!
I mean, if I had the choice between plain oatmeal and one that tastes like pumpkin pie AND has extra protein (from the collagen peptides), it would be hard to pass up the pumpkin pie option!
Ingredients needed to make this Gluten-Free Pumpkin Collagen Oatmeal:
- gluten-free rolled oats
- pumpkin puree
- water
- almond milk
- cinnamon
- collagen peptides
- pumpkin pie spice ( if you don’t have pumpkin pie spice, you can use a combination of ground ginger, all spice, cloves and cinnamon to make a similar concoction)
- maple sugar ( or brown sugar or coconut sugar)
Adding almond milk results in a creamy oatmeal, and adding collagen peptides is a tasteless way to add protein.
Feel free to add any non-dairy milk of your choice though. I’ve tried this recipe with oat milk and enjoyed it.
Also, I like using canned pumpkin puree, but if you have homemade, that would be great.
How to make this stovetop pumpkin oatmeal
For starters, you add the rolled oats, water, almond milk, pumpkin puree, and collagen peptides to a saucepan and mix everything together.
Then you cook it until the oatmeal is soft. For me, this takes about 6 minutes! Cook it on medium high for a few minutes and then medium low for a few.
Then once the oatmeal is cooked, add the cinnamon, pumpkin spice, and sugar and mix.
Can I put collagen powder in my oatmeal?
Yes! Collagen powder dissolves easily when adding it to any sort of liquid.
Since this oatmeal heats up and cooks, it dissolves even more quickly.
I’m the type of person that needs to eat something different to eat all the time. So I looked into easy pumpkin breakfast recipes and came up with this Gluten-free Pumpkin Collagen Oatmeal.
I also can’t resist the challenge of making really delicious oatmeal recipes. I’ve made gingerbread oatmeal, chocolate chip cookie cookie oatmeal ( which is almond butter and melted chocolate chips), and countless fruity oatmeals. My favorite fruit combination is nectarine and banana. 🙂

Note: feel free to omit the collagen peptides if you do not want to add it to your oatmeal. It will still taste the same!
Also! This recipe tastes amazing with maple butter. If you have never tried maple butter, you must! It’s basically whipped creamy maple syrup and it is amazing!

Gluten-Free Pumpkin Collagen Oatmeal
Ingredients
- 1/2 cup Gluten-free rolled oats
- 1/2 cup water
- 1/2 cup almond milk
- 1/4 cup organic pumpkin puree
- 1 scoop collagen peptides
- 1/4 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1 1/2 Tbs maple sugar ( or coconut sugar)
Instructions
- Add the rolled oats, water, almond milk, pumpkin puree, and collagen peptides to a saucepan and mix. Heat over medium-high heat. Cook for 2-3 minutes, mixing often.
- Reduce the stovetop heat to medium-low and cook for another 3 minutes. Remove the pan from heat.
- Add the cinnamon, pumpkin spice, and maple sugar and mix.
- I love adding maple butter to the top of mine.
