If you saw my last post sharing my Paleo Tomato Bacon Jam recipe, then you saw that I discovered this jam when I ordered a deviled eggs recipe that had a tomato bacon jam both on top and underneath the deviled eggs.

The flavor combo was so on point, that I knew I had to make my own version at home. Not only did I want to make a dairy-free, Paleo version, but I also didn’t want to have to wait to eat this dish again. Now I can make it whenever I want! 🙂

As I had mentioned in my prior post, I ordered a deviled eggs recipe topped with tomato bacon jam while my husband and I were on a trip in St. Augustine.

We were both blown away with how delicious these deviled eggs were. The concept seemed quite simple, yet it was not something I had ever thought to do before.

That is something I love about exploring new places and restaurants. Discovering new flavor combinations and being inspired to recreate new and exciting dishes at home.

To recreate this dish, I had to 1) figure out how to make a Paleo Tomato Bacon Jam and 2) figure out how to make deviled eggs.

I had never made either before.

Which is crazy to me. Well, not ever having made tomato bacon jam isn’t crazy…and now that I posted a great Paleo Tomato Bacon Jam recipe, that can’t be my excuse.

However, never making deviled eggs before is crazy to me because I really loved them.

It’s kind of one of those things where, after you hard boil an egg, it’s easier to just eat it as is or to mix it with mayo and call it a day.

But honestly making deviled eggs really isn’t that much more work! It’s a mere matter of adding more spices to the hard boiled egg yolks when you smash them.

(I also put the egg yolk mixture into a plastic bag and used a piping kit to pipe the mixture into the eggs… this is more work BUT the result is a much more appetizing dish)

Then, really just top your deviled eggs with the tomato bacon jam and call it a day. 🙂

Though, I really like having some tomato bacon jam underneath the deviled egg as well as on top because I love having as much of that tomato bacon jam flavor as possible.

This Paleo Deviled Eggs topped with Tomato Bacon Jam is a great appetizer or snack to make to bring to a party or a summer BBQ.

I have to stay away from dairy because my infant is allergic to it and so I’ve been making a lot of my own food and bringing it to gatherings to ensure I can eat something without dairy in it.

This is exactly the type of appetizer or snack that you could make and that no one would know is paleo. 🙂

Ingredients
  

Paleo Tomato Bacon Jam Ingredients:

  • slices  bacon
  • pound  tomatoes on the vine
  • 1/4  yellow onion
  • 1/2  cup  coconut sugar
  • Tbs  apple cider vinegar
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  black pepper

Paleo Tomato Bacon Jam Instructions:

  • Cook the bacon in microwave. Put the bacon on a microwave safe plate, sandwiched between paper towels and cook for 3 minutes. Then cook for another 2 minutes, until the bacon is crispy. Once the bacon has cooled, crumble it up.
  • Put the onion and tomatoes into a food processor and mix. Then pour the mixture into a saucepan, add the coconut sugar, apple cider vinegar, salt, and pepper, and mix.
  • Heat the tomato mixture over medium heat, and stir in the crumbled bacon. Cook for 30 mins, mixing every so often, until the jam is thick.

Paleo Deviled Eggs Instructions:

  • Boil eggs using preferred method. I followed the instructions here. Once your eggs are boiled, cut them in half, lengthwise. Then, carefully remove the egg yolks and put them into a medium bowl.
  • Mash the egg yolks with a fork. Next, add the mayonnaise, almond milk dried parsley paprika, salt, pepper, and apple cider vinegar. Mix everything until well blended.
  • Fill the egg halves with the yolk mixture. I pipped them into the egg halves to make it look pretty.
  • Add the tomato bacon jam to the top of the deviled eggs. ( I also add some underneath)
  • Keep refrigerated until served.

Notes

Note: you will have extra tomato bacon jam.
