These healthy ground beef bowls are filled with Mediterranean flavor! Made with savory ground beef, roasted potatoes and eggplant, fresh veggies and tangy feta cheese, they make for a wonderful high-protein flavorful meal.
Give me a filling veggie and protein filled bowl any day and I am a happy camper! My Korean beef bowls and salmon rice bowls have been on my regular weekday meal rotation. And now I have added these Greek beef bowls to the mix.
They are filled with delicious greek flavors like tomatoes, cucumbers, eggplant, red peppers and feta. The ground beef is cooked in lemon, oregano, and maple syrup, which is just delicious! These bowls make for wonderful meal prep and are a healthy lunch/ dinner option.

What makes this recipe great

Recipe ingredients

- Eggplant and gold potatoes– these will be roasted in the oven while you prep the rest of the recipe.
- Olive oil– this is a must in Mediterranean meals. Some of the veggies here are roasted in it and the raw ones are sprinkled in it. Use a good quality one here.
- Red pepper, tomatoes, cucumbers– these add great crunch and vitamins to the dish.
- Beef– I like to use 85% lean ground beef here.
- Lemon juice– This helps season the beef.
- Garlic powder and dried oregano– these seasonings help season the meat and veggies in this recipe.
- Maple syrup– this adds a nice sweetness to the meat.
- Feta cheese– you can use crumbled feta or buy your own feta in brine and crumble it yourself.

- Instead of gold potatoes, you can use red potatoes or fingerlings.
- You can omit red pepper, tomatoes, or cucumbers based on preference.
- Instead of beef, you can use ground turkey.

Step by step instructions

Step 1: Dice the potatoes and mix with oil and oregano. Put them on a cookie sheet and roast in the oven.

Step 2: Dice the eggplant and mix with oil and oregano. Put them on a cookie sheet and roast in the oven.

Step 3: Cook the ground beef with lemon juice, oregano, garlic powder, salt, pepper and maple syrup. Cook until the fat evaporates out.

Step 4: Cook the beef until the bottom gets a bit crispy.

Step 5: Dice the tomatoes and red pepper. Slice the cucumbers.

Step 6: Remove the roasted eggplant from the oven and set it aside.

Step 7: Remove the roasted potatoes from the oven and set it aside.

Step 8: Put the bowls together. Add the roasted potatoes and eggplant to the bowl. Add the fresh veggies and ground beef. Top with crumbled feta. Sprinkle oregano on top. Add a bit of olive oil to the fresh veggies.
Expert tips
- How to store– store in an airtight container in the refrigerator for 2-3 days.
- Make sure the potatoes are cut small enough that they cook and roast in 35 minutes.
- Keep an eye on the ground beef as it cooks. At first, you’ll mix it less. Once the fat evaporates, you’ll want to mix it more. As soon as the bottom of the beef gets crispy, remove it from heat.
- This recipe is light, but if you want to add a bit more flavor, you can make a lemon dressing to add to the veggies or add hummus or tzatziki to the bowl.

Greek Bowl with Ground Beef and Potatoes

Ingredients
- 1 eggplant
- 2 lbs gold potatoes
- 4 Tablespoons olive oil, divided, and some extra to sprinkle!
- 1 teaspoon dried oregano, divided, and some extra to sprinkle
- 1 lb ground beef
- 1.5 Tablespoons lemon juice
- 1.5 Tablespoons maple syrup
- 1/2 teaspoon garlic powder
- 1 red pepper
- 4 roma tomatoes
- 1 cucumber
- 3/4 teaspoon salt, divided
- 1/4 teaspoon pepper
- 1/2 cup crumbled feta, ( more or less to taste)
Instructions
- Preheat the oven to 400 degrees. Put aluminum foil on top of two cookie sheets, then grease each cookie sheet with olive oil.
- Cut the potatoes into cubes, put them into a large bowl, and top them with 2 Tablespoons of of olive oil, 1/4 teaspoon of salt, a pinch of pepper, and 1/4 teaspoon oregano. Mix with a spoon. Pour the potatoes onto the cookie sheet and roast in the oven for 35 minutes, until golden.
- Slice the eggplant and cut into cubes. Put the eggplant cubes into a large bowl, top with 2 Tablespoons of olive oil, a pinch of salt, a pinch of pinch pepper, and 1/4 teaspoon of oregano. Mix with a spoon. Pour the eggplant onto the cookie sheet and roast for 25 mins, until soft and roasted.
- Dice the red pepper and tomatoes. Slice the cucumbers.
- Heat a frying pan over medium heat. Add a splash of olive oil. Add the ground beef to the pan, breaking it up into pieces. Then add 1.5 Tablespoons lemon juice, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1.5 Tablespoons maple syrup. Mix everything together. Let the meat cook without mixing for several minutes, them mix. Cook until all the fat evaporates and the beef is crispy on the bottom. You’ll notice once the fat/liquid evaporates that this is when it should start getting crispy on the bottom. Keep a close eye on it at this point because you don’t want it to burn. This happens around 10 minutes. The beef should cook for a total of 10-12 minutes total.
- Fill each bowl with roasted potatoes and eggplant, diced tomatoes and red peppers, sliced cucumbers, and ground beef. Sprinkle a little bit of salt and olive oil on the tomatoes, cucumbers and red peppers. Top each bowl with feta and dried oregano.
