Greek Bowl with Ground Beef and Potatoes

This Greek-inspired bowl is filled with savory ground beef, roasted potatoes and eggplant, fresh veggies and tangy feta cheese. It makes for a wonderful high-protein flavorful meal.

Ingredients

  • 1 eggplant
  • 2 lbs gold potatoes
  • 4 Tablespoons olive oil divided, and some extra to sprinkle!
  • 1 teaspoon dried oregano divided, and some extra to sprinkle
  • 1 lb ground beef
  • 1.5 Tablespoons lemon juice
  • 1.5 Tablespoons maple syrup
  • 1/2 teaspoon garlic powder
  • 1 red pepper
  • 4 roma tomatoes
  • 1 cucumber
  • 3/4 teaspoon salt divided
  • 1/4 teaspoon pepper
  • 1/2 cup crumbled feta ( more or less to taste)

Instructions

  • Preheat the oven to 400 degrees. Put aluminum foil on top of two cookie sheets, then grease each cookie sheet with olive oil.
  • Cut the potatoes into cubes, put them into a large bowl, and top them with 2 Tablespoons of of olive oil, 1/4 teaspoon of salt, a pinch of pepper, and 1/4 teaspoon oregano. Mix with a spoon. Pour the potatoes onto the cookie sheet and roast in the oven for 35 minutes, until golden.
  • Slice the eggplant and cut into cubes. Put the eggplant cubes into a large bowl, top with 2 Tablespoons of olive oil, a pinch of salt, a pinch of pinch pepper, and 1/4 teaspoon of oregano. Mix with a spoon. Pour the eggplant onto the cookie sheet and roast for 25 mins, until soft and roasted.
  • Dice the red pepper and tomatoes. Slice the cucumbers.
  • Heat a frying pan over medium heat. Add a splash of olive oil. Add the ground beef to the pan, breaking it up into pieces. Then add 1.5 Tablespoons lemon juice, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1.5 Tablespoons maple syrup. Mix everything together. Let the meat cook without mixing for several minutes, them mix. Cook until all the fat evaporates and the beef is crispy on the bottom. You’ll notice once the fat/liquid evaporates that this is when it should start getting crispy on the bottom. Keep a close eye on it at this point because you don’t want it to burn. This happens around 10 minutes. The beef should cook for a total of 10-12 minutes total.
  • Fill each bowl with roasted potatoes and eggplant, diced tomatoes and red peppers, sliced cucumbers, and ground beef. Sprinkle a little bit of salt and olive oil on the tomatoes, cucumbers and red peppers. Top each bowl with feta and dried oregano.

Notes

  • Instead of gold potatoes, you can use red potatoes or fingerlings.
  • You can omit red pepper, tomatoes, or cucumbers based on preference.
  • Instead of beef, you can use ground turkey.
  • Instead of maple syrup, you can use honey.
  • You can double the amount of beef for even extra protein.
