I am obsessed with this maple glazed banana bread. From the hint of maple in the banana bread itself, to the maple glaze on top, it is just banana bread deliciousness that is great for breakfast, snack or dessert.

- Vanilla– this is used in both the bread and glaze. You can use one either with or without alcohol in it.
- Flour– an unbleached all purpose flour works great in this recipe.
- Baking soda– this makes the maple banana bread rise while baking.

Step by step instructions

Step 1: Put the mashed bananas, maple syrup, olive oil, eggs and vanilla together in a bowl and mix.

Step 2: In another bowl, mix the flour, cinnamon, salt, and baking soda together.

Step 3: Pour the bowl of dry ingredients into the bowl of wet ingredients and mix until combined.

Step 4: Pour the banana bread batter into a lined bread tin.

Step 5: Bake until golden and cooked through.

Step 6: Make the glaze by mixing the powdered sugar, maple syrup, vanilla, salt and olive oil together.

Step 7: Once the banana bread is cooled off, pour the maple glaze on top.

Maple Banana Bread with Maple Glaze

Ingredients
Maple banana bread ingredients
- 1/3 cup olive oil
- 2 eggs
- 1 cup mashed bananas, ( from 2-3 ripe bananas)
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Maple glaze ingredients
- 1/4 cup powdered sugar
- 3 Tablespoons maple syrup
- 1 teaspoon olive oil
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat oven to 350 degrees F. Line and grease a 9 in x 5 in loaf tin. I line mine with parchment paper and grease it with an olive oil spray. Put the oven rack in the middle of the oven.
- In one bowl, mix 1/3 cup olive oil, 2 eggs, 1 cup mashed bananas, 1/2 cup maple syrup, and 1 teaspoon of vanilla together.
- In another large bowl, add 1 3/4 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon of ground cinnamon and mix it all together with a fork.
- Pour the bowl of dry ingredients into the bowl of wet ingredients and mix until banana bread batter forms.
- Pour the banana bread batter into the lined loaf tin. Bake for 45-55 minutes.
- Remove the banana bread from the oven then let it cool for 10 minutes in the tin. Remove it from the loaf tin and let it cool on a wire rack.
- While the banana bread cools, make the maple glaze. In a small bowl, mix 1/4 cup powdered sugar, 3 Tablespoons maple syrup, 1 teaspoon olive oil, 1 teaspoon vanilla, and a pinch salt. Mix until the glaze is smooth.
- Once the banana bread is cooled, pour the glaze on top.
