Grilled Pineapple Salsa

A delicious homemade salsa recipe made with grilled pineapple to add a hint of sweetness!

Ingredients

  • 2 teaspoons maple syrup
  • 4 slices fresh pineapple rings
  • 2 cups chopped tomatoes
  • 3/4 cup finely chopped red bell pepper
  • 1/2 cup diced white onion
  • 3 Tablespoons lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon paprika

Instructions

  • Set your oven to "broil" and move the oven rack to the top ring of the oven.
  • Cover a cookie sheet with aluminum foil and place pineapple rings onto the pan. Cover the tops of the pineapple rings with 2 teaspoons of maple syrup. Broil them for 5-7 minutes, until grilled on top. (Check the pineapple often because the speed at which they grill depends on the oven). Remove from the oven and set aside.
  • In a large bowl, add 2 cups chopped tomatoes, 3/4 cup finely chopped red bell pepper, 1/2 cup diced white onion, 3 Tablespoons lime juice, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 1 teaspoon paprika. Mix well.
  • Cut the pineapple into chunks and add to the salsa. Mix and then serve.
  • This recipe makes 3 cups of salsa.

Notes

  • Instead of red bell pepper, you can use green bell pepper.
  • You can add jalapeno pepper to make things more spicy.
  • You can add cilantro if you like that flavor.
  • You can use fresh tomatoes instead of canned.
