Creamed Peas (Dairy-free option)
A delicious and cozy creamed peas recipe made by creating a smooth rich sauce from butter, flour, and milk that is seasoned with nutmeg. A dairy-free version of this recipe is provided as well.

- 2 Tbs butter (or olive oil for a dairy-free option)
- 1/4 cup flour
- 2 cups milk (or almond milk for a dairy-free option)
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
- 1 can peas
- optional- lemon juice
Add butter to the pan and heat over medium low heat. Once it is melted, add the flour and mix with a whisk or fork until it clumps.Note: if you are using olive oil, just add the flour to it after a few seconds. Add 1 cup milk or almond milk and then whisk, breaking up clumps as you go. Let the mixture boil and thicken while whisking. Then let it sit for a few minutes. The sauce will be very thick. Then Add another 1 cup of milk or almond milk, whisk, and let it sit. Whisk every so often until sauce reaches desired thickness.
Add salt, pepper and nutmeg and mix.
Turn off heat.
Add 1 can of peas and mix. Season with more salt or nutmeg to taste.
Optional- After serving, sprinkle lemon juice on top. Test this out with a small area to make sure you like it first.
- When making the sauce, you can easily make the consistency more or less thick. If you need to thicken it, add flour. If you need to thin it out, add more milk. I recommend waiting before taking action because the sauce thickens on its own with time.
- I prefer only salt, pepper and nutmeg in this sauce. Feel free to add garlic powder, paprika or sugar to change the taste to your liking.
- Try the peas as they are, but then also try to add a sprinkle of lemon juice to see how you like the flavor.
