Chia Oatmeal Chocolate Chip Snack Balls (GF, Vegan)

  • Put oatmeal, almond flour, chia seeds and salt in a large bowl and mix. In another bowl mix the vanilla, maple syrup, olive oil, and almond butter. Mix the dry ingredients into the wet ingredients. Add the chocolate chips and mix. Add 2 Tbs water to get the batter to stick together. Mold the batter into balls in the palm of your hand. ( it helps to wash your hands and lightly dry them prior to doing so)
  • Refridgerate for 2 hours. Then, store in an airtight container. These should last about a week in the fridge. Note: these also taste good at room temperature and can be stored for 3 days at room temperature.  
  • Yields: 16 snack balls.
