Chia Oatmeal Chocolate Chip Energy Balls

Healthy snack balls that taste like yummy oatmeal chocolate chip cookies, but in a healthier, lower-calorie, gluten-free and vegan form.

Instructions

  • Add all of the ingredients into a bowl and mix. Refrigerate the mixture for 30 minutes. Then, roll into balls. I like to use a small cookie scoop.
  • Refridgerate for 2 hours. Then, store in an airtight container. These should last about a week in the fridge. Note: these also taste good at room temperature and can be stored for 3 days at room temperature.  
  • Yields: 16 snack balls.

Notes

  • To roll the dough into balls
    • If using you hands to roll the dough into balls, then wet your hands so the dough doesn't stick to them.
    • I find using a small cookie scoop best to roll the balls.
