Rotisserie Chicken Salad Wraps with Apples, Raisins and Grapes { Paleo, Whole30}

Ingredients

  • romaine lettuce, (for the wraps)
  • 4 cups diced organic rotisserie chicken, (this was from 1 organic rotisserie chicken for me)
  • 4-6 Tbs Paleo mayonnaise , (depends on how much you want)
  • 1 tsp dijon mustard
  • 1 Tbs apple cider vinegar
  • salt and pepper to taste
  • 1 cup diced apples
  • 1/2 cup raisins
  • 1 cup sliced grapes

Instructions

  • Cut rotisserie chicken into bite sized pieces and place into a large bowl. This should yield about 4 cups of diced chicken.
  • In a small bowl, mix the Paleo mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper together. Pour into the diced chicken and mix well.
  • Then, add the diced apples, sliced grapes and raisins to the chicken salad and mix.
  • Then put the chicken salad into wraps and top with toppings of your choice. I like shredded carrots and sliced tomatoes.
  • Should serve 4-6 people, depending on serving size.
