Cut rotisserie chicken into bite sized pieces and place into a large bowl. This should yield about 4 cups of diced chicken.
In a small bowl, mix the Paleo mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper together. Pour into the diced chicken and mix well.
Then, add the diced apples, sliced grapes and raisins to the chicken salad and mix.
Then put the chicken salad into wraps and top with toppings of your choice. I like shredded carrots and sliced tomatoes.
Should serve 4-6 people, depending on serving size.
