Preheat your waffle maker, and spray with a non-stick cooking spray. I like to use an olive oil spray. Set aside.
Add the tapioca flour, almond flour, coconut flour, baking soda, coconut sugar, salt, and cinnamon to a large bowl. Whisk together.
In another bowl, beat the egg whites with a hand mixer for about 2 minutes, until stiff peaks form.
In yet another bowl, mix together the egg yolks, olive oil, almond milk, and vanilla extract together until the mixture thickens a bit.
Then, pour the egg yolk mixture into the bowl of dry ingredients and mix with a fork. Let the mixture sit for a minute or two to thicken. Then, fold in the egg whites.
Pour the batter into your hot waffle iron and cook according to the instructions on your waffle maker manual.
I use the Cuisinart Double Belgian Waffle Maker and can make 5 round waffles using this recipe.
