Easy Baked Turkey Spinach Meatballs (Gluten-free)

These Easy Baked Turkey Spinach Meatballs are delicious and healthy meatballs made with fresh spinach, rolled oats, and ground turkey.

Ingredients

  • 1 pound ground turkey (93% lean)
  • 1/2 cup rolled oats
  • 2 cups fresh spinach
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg
  • 1 Tablespoon balsamic vinegar

Instructions

  • Preheat oven to 400 degrees F. Cover a cookie sheet in aluminum foil.
  • Put spinach into a food processor and mix until all chopped up.
  • Mix all of the ingredients together in a large bowl. Roll into tablespoon sized balls and place on cookie sheet.
  • Bake for 20 minutes. Makes 19-20 meatballs

Notes

  • Instead of ground turkey, you can use ground chicken.
  • Instead of fresh spinach, you can use swiss chard.
  • Instead of balsamic vinegar, you can use soy sauce or coconut aminos.
