Healthy Cranberry Orange Banana Bread (Dairy-free, Gluten-free)

- 1/3 cup olive oil
- 1/2 cup coconut sugar or maple sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 3 bananas mashed
- zest from 1 orange (this was 1.5 teaspoons for me)
- juice from one orange (this should be around 1/4 to 1/3 cup)
- 1 1/4 cups almond flour
- 1/2 cup tapioca flour
- 2 Tablespoons coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup fresh cranberries
Preheat oven to 350 degrees F. Grease a 9 in x 5 inch loaf pan and line it with parchment paper.
In a large bowl, mix the olive oil and coconut sugar with a fork or whisk. Add the eggs, vanilla, mashed bananas, orange zest and orange juice and whisk again.
In another bowl, combine the almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon. Mix with a fork until blended.
Pour the bowl of dry ingredients into the bowl of wet ingredients and mix until just combined. Fold in the fresh cranberries.
Pour the banana bread batter into the loaf pan. Bake for 45-55 minutes, until golden brown and a toothpick comes out mostly clean.
