Healthy Ground Chicken and Turkey Meatloaf

A moist, flavorful, and lightened up meatloaf made with ground turkey, ground chicken, minced carrots, rolled oats, and thyme.

Ingredients

  • 1 lb ground chicken
  • 1 lb ground turkey
  • 2 medium carrots
  • 1 shallot
  • 4 cloves garlic
  • 2 eggs
  • 3/4 cup rolled oats
  • 3 Tablespoons tomato paste
  • 1 Tablespoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon thyme
  • 1/2 cup ketchup
  • 1 Tablespoon blackstrap molasses

Instructions

  • Preheat oven to 350 degrees F. Line a 9 in x 5 in loaf pan with parchment paper, leaving an overhang on two opposite sides so you can easily lift the meatloaf out of the pan.
  • Mince the shallot, garlic, and carrots in a food processor. Put into a pan with some olive oil and cook over medium heat for 3-4 minutes.
  • In a large bowl, add the ground chicken, ground turkey, and the cooked minced carrots, onions and garlic. Add the eggs, rolled oats, tomato paste, mustard, salt, pepper, and thyme to the bowl and mix.
  • In a small bow, mix the ketchup and blackstrap molasses together.
  • Put the meatloaf mixture into the loaf tin and evenly pat it down. Cover in the ketchup molasses mixture. Cook for 75 minutes.
  • Remove from the oven and let the meatloaf sit for 15 minutes before serving.

Notes

  • You could use just ground turkey instead of half ground turkey and half ground chicken.
  • Instead of shallot, you can use white onion.
  • Instead of blackstrap molasses, you could use maple syrup or brown sugar.
