Paleo Waffle Recipe (Gluten-free, Dairy-free)

A fluffy cinnamon laced belgian waffle recipe that is naturally dairy-free, gluten-free, grain-free, and Paleo.

  • Preheat your waffle maker, and spray with a non-stick cooking spray. I like to use an olive oil spray. Set aside.
  • Add the tapioca flour, almond flour, coconut flour, baking soda, coconut sugar, salt, and cinnamon to a large bowl. Whisk together.
  • In another bowl, beat the egg whites with a hand mixer for about 2 minutes, until stiff peaks form.
  • In yet another bowl, mix together the egg yolks, olive oil, almond milk, and vanilla extract together until the mixture thickens a bit.
  • Then, pour the egg yolk mixture into the bowl of dry ingredients and mix with a fork. Let the mixture sit for a minute or two to thicken. Then, fold in the egg whites.
  • Pour the batter into your hot waffle iron and cook according to the instructions on your waffle maker manual.
  • I use the Cuisinart Double Belgian Waffle Maker and can make 5 round waffles using this recipe.

Notes

  • Follow the instructions on your waffle manual. Each waffle maker cooks differently so it is hard to give set instructions for the cooking portion of this recipe.
  • Don't cook these on too hot a setting or they dry out. I use the Cuisinart Double Belgian Waffle Maker and found that using the middle setting for heat worked great. This waffle maker results in 5 circular Belgian waffles using this recipe.
  • Don't skip the step to whip the egg whites into stiff peaks. This makes sure the waffles are fluffy.
