Healthy Shepherd's Pie with Ground Turkey and Apple (Paleo, Whole30)
A cozy Fall inspired healthy Shepherd's Pie recipe made with ground turkey, diced apples, rubbed sage, and a creamy dairy-free cauliflower potato mash.

Shepherd’s Pie filling ingredients:
- 1 Tbs olive oil
- 1 cup sliced carrots
- 2 cups diced apples
- 2 lbs ground turkey (I use 94% lean ground turkey)
- 2 tsp dried parsley
- 2 tsp rubbed sage
- ½ tsp ground black pepper
- 1 tsp salt
- 1 tsp onion powder
- 1 Tbs mustard
- 3 Tbs tomato paste
- 1/2 cup strained tomatoes
Cauliflower potato mash ingredients:
- 6 medium potatoes cut into 1 inch slices
- 1 head of cauliflower cut into smaller florets
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 cup almond milk
- 2 Tbs olive oil
Boil the sliced potatoes, and the cauliflower florets in water for 20-25 minutes, until you can easily stab the potatoes with a knife. Set aside.
Preheat the oven to 400 degrees.
Shepherd's pie filling instructions:
Put 1 Tbs olive oil, 1 cup of sliced carrots, and 2 cups of diced apples into a large pot/pan, and mix. Heat over medium heat and sauté until tender, about 4-5 minutes.
Add the ground turkey to the pot breaking it up into smaller pieces. Top the ground turkey with 2 tsp parsley, 2 tsp rubbed sage, 1/2 tsp pepper, 1 tsp salt, 1 tsp onion powder, 1 Tbs mustard, and 3 Tbs tomato paste. Mix and cook until the meat is cooked through, about 6-8 minutes.
Add 1/2 cup strained tomatoes, mix.
Pour the shepherd's pie filling into a 9 in x 13 in pan.
Cauliflower potato mash instructions:
Put the boiled potatoes and cauliflower florets into a large bowl and mash. Top with 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp salt, 1/4 tso pepper, and 1/4 cup almond milk and mash.
Scoop the cauliflower potato mash onto the shepherd's pie filling in the pan, evenly distributing it and then smooth it out with a spatula.
Bake for 20-25 minutes. If you want to add a bit of crisp to the top, set your oven to broil and cook for a few more minutes.

- Instead of onion powder, you can use raw onions and cook them with the ground turkey.
- Instead of cauliflower, you can use more potatoes.
- Instead of almond milk, you can use any non-dairy milk of choice.
