Homemade Strawberry Almond Milk (Paleo, GF)

Fresh homemade strawberry almond milk made by making your own strawberry syrup.

Ingredients

  • 2 cups fresh strawberries , sliced
  • 1/3 cup maple syrup
  • 2 Tbs water
  • tsp  vanilla extract
  • 1 1/2 cups raw almonds
  • cups  water

Instructions

  • Soak the almonds in water for 8-12 hours.
  • Add 2 cups of sliced strawberries, 1/3 cup maple syrup, 2 Tbs water and 2 tsp vanilla to a pan and cook over medium heat. Mix everything together and then wait until the mixture bubbles to mix again. While the strawberries cook, pay attention to how soft they are. Once the strawberries soften, mash them with a fork or a mashed potato masher. Mix every so often until a syrup forms, this should takes 15-18 minutes total. Then, use a mesh strainer to strain the syrup into a small bowl and set aside. ( There should be about 3.5-4 Tbs of syrup) Put the strawberry remains aside; your going to use those too!
  • Drain the almonds and then put them into a blender.
  • Add 6 cups of water to the blender, along with the strawberry remains, and mix for about a minute ( you may need to mix for more or less time depending on the strength of your blender…).
  • Pour the contents in the blender into a Nut Milk Bag to strain it. Twist & squeeze the bag until all the almond milk is out and the pulp is separated from the milk. I place my nut milk bag into a large glass container and then twist and squeeze the almond milk directly into the glass container.
  • Pour the strained almond milk into a glass container, along with the strawberry syrup (there should be 3.5-4 Tbs ) and mix. Chill in the refrigerator.
  • This recipe should yield about 5 cups of strawberry almond milk.
