Servings: 8 servings
- ½ onion finely chopped ( you can use 1 tsp of onion powder instead of raw onions)
- 1 Tbs olive oil
- 2 lbs ground turkey ( I used 94% lean ground turkey)
- 1/3 cup almond flour
- 2 cups diced apples
- 3 eggs beaten
- 2 tsp dried parsley
- 2 tsp rubbed sage
- ½ tsp ground black pepper
- 1 tsp salt
- ½ tsp onion powder
- 1 Tbs mustard
- 3 Tbs tomato paste
Preheat oven to 350 degrees F.
Add olive oil and chopped onion to a pan and sauté over medium-high heat until soft, about 3 minutes.
Put the sautéed onion into a large bowl. Add the ground turkey, almond flour, diced apples, eggs, dried parsley, rubbed sage, black pepper, salt, onion powder, mustard, and tomato paste to the bowl. Combine all ingredients, mixing thoroughly.
Line a 9 in x 5 in loaf pan with parchment paper, leaving overhang on two opposite sides so you can easily lift the meatloaf out of the pan when it has cooled.
Put the meatloaf mixture into the parchment lined loaf tin and evenly pat it down. Optional- add a few apple slices on top to make it pretty.
Bake at 350 degrees, for 1 hour and 15 minutes.
Remove the meatloaf from the oven and let it sit for 15 minutes before removing from the pan and slicing.
Note: if you don't want to use fresh onions, you can use 1 tsp of onion powder instead. (You'll end up using 1.5 tsp total). Then you can skip the step of cooking the onions.
Note: you can put these into a 12 muffin tin and cook for 35 minutes. Make sure to let it still sit for 10-15 minutes before removing from the muffin tins.
