Gluten-free Cherry Chocolate Oat Granola Bars

Healthy homemade granola bars filled with chia seeds, oats, sunflower seeds, pumpkin seeds, and almonds. They make for a great snack on the go.

  • Heat the honey, water, vanilla, and almond butter in a saucepan over medium heat until it boils and melts. Then turn off heat and leave in pan.
  • In a separate bowl, mix together the oats, almond flour, unsweetened coconut, chia seeds, sunflower seeds, pumpkin seeds, crushed almonds and dried cherries.
  • Pour the honey/almond butter mixture over the oat mixture and mix. Mix in 1/3 cups of the chocolate chips.
  • Line a 8x8in square pan with wax paper or parchment paper and pour the mixture into it.
  • Wet your spatula with water and pat down the mixture until it is even and firm in the pan. Top with the other 1/3 cup of the chocolate chips and pat down.
  • Refrigerate for an hour to overnight.
  • Lift the hardened granola bars out of the pan by pulling two sides of the wax paper up.
  • Place them on a hard surface and cut into 12 granola size bars using a very sharp knife. Note: make sure the knife is sharp or else the bars will crumble more when cutting.
