Gluten-free Chocolate Cherry Waffles (Paleo)

A healthy grain-free chocolate and cherry waffle recipe topped in a fresh cherry compote.

Ingredients

Cherry Compote ingredients:

  • 3 cups pitted and sliced cherries
  • 2 tsp honey
  • 2 tsp lemon juice

Instructions

Make the cherry compote.

  • Put 3 cups of sliced and pitted cherries, 2 tsp honey, and 2 tsp lemon juice into a pan and heat over medium to medium-high heat and let boil for about 10 mins. Set aside.

Next, make the waffle batter.

  • In a large bowl, put the 1 cup of diced cherries, eggs, olive oil, unsweetened almond milk, maple syrup and vanilla into a bowl and mix with handheld electric mixer until well mixed and bubbly in texture--- about 1.5 minutes on the highest speed setting.
  • In another large bowl, mix the almond flour, tapioca flour, arrowroot flour, coconut flour, baking soda, and cocoa powder together with a fork.
  • Pour the dry ingredients into the bowl of wet ingredients and mix with a fork. Fold in the chocolate chips.
  • Then, spray oil onto your waffle maker and preheat it until it is ready to be used. ( I set my waffle maker setting to 5 out of 7 heat)
  • Pour the waffle batter into your waffle maker (I used a Villaware Belgian Waffler). Cook until the waffle is golden brown in color and crisp on the outside. Repeat with the remaining batter.
  • This recipe yields 9 waffle squares that are 5 inches long per side. This would be good for about 5-7 people.

Notes

  • Cook your waffles according to the instructions on your waffle maker. I love this Villaware waffle maker.
  • Serve warm with cherry compote, almond butter, chocolate chips and maple syrup on top.
  • Store leftovers on the counter in an airtight container for 3 days.
