Broccoli Asparagus Primavera (paleo, GF)

Servings: 2 -4
Cook Time: 15 minutes
Total Time: 15 minutes

  • 1.5 Tbs minced garlic OR you can thinly slice 3 cloves of garlic
  • 1 Tbs olive oil
  • 1 crown of broccoli
  • a sprinkle of crushed red pepper flakes
  • 1/2 of a bunch of asparagus, (I used about 35 thin asparagus), cut the hard bottoms off of each asparagus and then cut the rest into 3 pieces
  • 6 Tbs water, , divided
  • 1/2 cup of cherry tomatoes, (cut in half)
  • 1 cup chopped tomatoes, ( I use the Pomi brand )
  • 1 cup strained tomatoes, ( I also use Pomi for these)
  • 1/2 tsp dried sweet basil
  • 1/4 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp honey

  • Put the minced or sliced garlic and 1 Tbs of olive oil into a large frying pan, mix, and heat over medium/high heat.
  • Cut up the broccoli crown into small florets and put into the pan. Mix everything around and then let everything cook for about 3 minutes.
  • Then add 4 Tbs of water and a sprinkle of crushed red pepper flakes to the pan. Mix everything together with a spatula and let everything cook for another 3 minutes.
  • Add the cut up asparagus, 2 Tbs of water, and 1/2 cup of the halved cherry tomatoes to the pan. Lower the heat to medium, mix and cook for another 3 minutes.
  • Add 1 cup of chopped tomatoes, 1 cup of strained tomatoes, 1/2 tsp of basil, 1/4 tsp of oregano, 1/2 tsp of salt, 1/4 tsp of ground black pepper, and 1 tsp of honey to the pan. Mix, and cook for 6 minutes, mixing every so often.
