French Kale Salad à la Moutarde (Paleo, GF)

  • 7 heaping cups of chopped kale
  • 4 Tbs olive oil, (extra light)
  • 1 Tbs tarragon vinegar, (or apple cider vinegar)
  • 1 Tbs mustard, (old fashioned seed style Dijon mustard)
  • 1/4 tsp Himalayan salt, (you can add more later to taste)
  • 1-4- 1/2 tsp ground black pepper, (I like 1/2 tsp for more kick)
  • 1/2 tsp Herbes de Provence


  • In a small bowl, mix together the olive oil, vinegar, mustard, salt, pepper and herbs de provence. Mix it all with a fork or whisk until the dressing thickens.
  • Place the chopped kale into a large bowl and cover with the dressing.
  • Mix well until all of the kale is glistening with the dressing.
