Creamy Paleo Coleslaw

A delicious creamy Paleo coleslaw made with simple healthy ingredients.

Ingredients

  • 9 ounces coleslaw mix bag or 6 cups of coleslaw mix
  • 1/3 cup mayonnaise
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons honey
  • 1/2 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a small bowl, mix the mayo, apple cider vinegar, mustard, honey, salt, and pepper together with a fork to make the coleslaw dressing.
  • Put the shredded cabbage and carrots into a large bowl and mix.
  • Pour the coleslaw dressing onto the cabbage and carrot mixture and mix well. Top with salt/pepper to taste.
  • Eat immediately or refrigerate for several hours before serving.

Notes

  • Instead of honey, you can use maple syrup.
  • Instead of apple cider vinegar, you can use wine vinegar or white vinegar.
  • You can add celery seed to the dressing if you like that flavor.
