Creamy Paleo Coleslaw

- 9 ounces coleslaw mix bag or 6 cups of coleslaw mix
- 1/3 cup mayonnaise
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons honey
- 1/2 teaspoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
In a small bowl, mix the mayo, apple cider vinegar, mustard, honey, salt, and pepper together with a fork to make the coleslaw dressing.
Put the shredded cabbage and carrots into a large bowl and mix.
Pour the coleslaw dressing onto the cabbage and carrot mixture and mix well. Top with salt/pepper to taste.
Eat immediately or refrigerate for several hours before serving.
- Instead of honey, you can use maple syrup.
- Instead of apple cider vinegar, you can use wine vinegar or white vinegar.
- You can add celery seed to the dressing if you like that flavor.
