Ingredients

  • 3 Tablespoons lemon juice
  • 1/2 teaspoon ground turmeric
  • 1 Tablespoon honey
  • 2-3 cloves garlic minced
  • 2 teaspoons crushed or minced ginger
  • salt and pepper to taste
  • 1 pound wild caught salmon
  • extra slices of lemon

Instructions

  • Preheat oven to 400 degrees F. Place large sheet of aluminum foil on baking sheet.
  • In a bowl, add the lemon juice, ground turmeric, honey, minced garlic, minced ginger, salt and pepper. Mix.
  • Place salmon on top of foil on the baking sheet.
  • Pour the sauce mixture on top of the salmon. Top salmon with lemon slices.
  • Lift the edges of the foil upwards and fold over on top of salmon until fully covered. If you need more foil, add some to the top of the salmon.
  • Bake for 20 mins, or until the salmon reaches an internal temperature of 145 F.
  • Option to garnish the salmon with parsley before serving.

Notes

For the minced ginger, you can buy crushed/minced ginger that is frozen. Then microwave it before adding it to the sauce. You get the same fresh taste this way. OR you take a piece of fresh ginger, peel it, and use a grater to mince it.
