Naturally Sweet & Crunchy Paleo Kale Salad

Ingredients

Dressing Ingredients

  • 1 tsp olive oil
  • 2 tsp lemon juice
  • 1/4 tsp mustard, (dijon or hot english mustard)
  • 1 tsp apple cider vinegar
  • salt and pepper to taste

Salad Ingredients

  • 1.5 cups of chopped kale
  • 6-8 cherry tomatoes, , halved
  • 1/2 of a small avocado, , sliced
  • 1/2 of a red pepper, , diced
  • 1- 1.5 Tbs of raisins
  • 12 almonds
  • 1 cup of diced golden delicious apples, (this was 1 small apple for me)

Instructions

  • In a small bowl, mix all of the dressing ingredients together: 1 tsp olive oil, 2 tsp lemon juice, 1/4 tsp mustard, 1 tsp apple cider vinegar and salt and pepper to taste. Set the dressing aside.
  • Put 1.5 cups of chopped kale into a large bowl, cover in the dressing and mix well.
  • Add the 6-8 cherry tomatoes, 1/2 of a small avocado (sliced), 1/2 of a red pepper (diced),1-1.5 Tbs of raisins, 12 almonds, and 1 cup of diced golden delicious apples to the kale salad. Mix until everything has dressing on it.
  • Serves one.
