Ingredients

  • 1 pound ground chicken
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/8 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/4 tsp dried oregano
  • 1 Tbs hot sauce (Frank' hot sauce is Paleo :))
  • 1 egg , whisked
  • 3 Tbs almond flour
  • 2 tsp tomato paste

Instructions

  • Preheat the oven to 425 degrees.
  • Cover a cookie sheet in aluminum foil.
  • In a small bowl, mix together all of the dry spices ( salt, ground black pepper, chili powder, garlic powder, ground cumin, paprika, onion powder, dried parsley, and dried oregano).
  • In a large bowl, mix together the ground chicken and the dry spices. Add the hot sauce, whisked egg, almond flour, and tomato paste to the bowl and mix well.
  • Then, scoop 1 Tbs sized balls of the ground chicken mixture and place onto the cookie sheet. (You may need to roll the balls into your hands to shape them)
  • Cook for 20 minutes.
  • Yields 20 meatballs. ( 5 meatballs is about 26 grams of protein).
