- 1 pound ground chicken
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/8 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 1/2 tsp dried parsley
- 1/4 tsp dried oregano
- 1 Tbs hot sauce (Frank' hot sauce is Paleo :))
- 1 egg , whisked
- 3 Tbs almond flour
- 2 tsp tomato paste
Preheat the oven to 425 degrees.
Cover a cookie sheet in aluminum foil.
In a small bowl, mix together all of the dry spices ( salt, ground black pepper, chili powder, garlic powder, ground cumin, paprika, onion powder, dried parsley, and dried oregano).
In a large bowl, mix together the ground chicken and the dry spices. Add the hot sauce, whisked egg, almond flour, and tomato paste to the bowl and mix well.
Then, scoop 1 Tbs sized balls of the ground chicken mixture and place onto the cookie sheet. (You may need to roll the balls into your hands to shape them)
Cook for 20 minutes.
Yields 20 meatballs. ( 5 meatballs is about 26 grams of protein).
