Grapefruit Guacamole (Paleo, Whole30)
Grapefruit adds a unique layer of flavor to guacamole in this easy recipe.

- 3 ripe avocados diced
- 1 large grapefruit sectioned, and juices reserved
- 1/2 of a small red onion minced
- 2 cloves garlic minced
- 3 Tbs minced fresh cilantro
- 1/2 tsp salt
- 2 Tbs lime juice
- 1/4 tsp cayenne pepper
- 1/2 cup diced tomatoes
Remove the grapefruit meat from the fruit. To do so, remove the pith and the membrane surrounding the fruit itself. I find it easiest to cut the grapefruit in half, then in half again, and then I gently remove the fruit from the membranes surrounding it. Put the grapefruit, along with its juices, in a large bowl.
Add the diced avocados to the bowl.
Add the red onion, garlic, cilantro, salt, lime juice, cayenne pepper, and chopped tomatoes to the bowl and mix with a fork until you have the desired consistency /chunkiness that you want.
