Grapefruit Guacamole (Paleo, Whole30)

Grapefruit adds a unique layer of flavor to guacamole in this easy recipe.

Ingredients

  • 3 ripe avocados diced
  • 1 large grapefruit sectioned, and juices reserved
  • 1/2 of a small red onion minced
  • 2 cloves garlic minced
  • 3 Tbs minced fresh cilantro
  • 1/2 tsp salt
  • 2 Tbs lime juice
  • 1/4 tsp cayenne pepper
  • 1/2 cup diced tomatoes

Instructions

  • Remove the grapefruit meat from the fruit. To do so, remove the pith and the membrane surrounding the fruit itself. I find it easiest to cut the grapefruit in half, then in half again, and then I gently remove the fruit from the membranes surrounding it. Put the grapefruit, along with its juices, in a large bowl.
  • Add the diced avocados to the bowl.
  • Add the red onion, garlic, cilantro, salt, lime juice, cayenne pepper, and chopped tomatoes to the bowl and mix with a fork until you have the desired consistency /chunkiness that you want.
