Lemon Arugula Salad

A simple healthy salad tossed in a fresh lemon honey oregano vinaigrette.

Ingredients

  • 7 ounces arugula
  • 5 Tbs lemon juice
  • 3 Tbs olive oil
  • 1 Tbs honey
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • optional- 1/2 cup shaved parmesan cheese

Instructions

  • In a small bowl, mix the lemon juice, olive oil, honey, dried oregano, salt, and pepper together until well mixed. Set the dressing aside.
  • Put the arugula into a large bowl. If you are adding parmesan, add it to the salad. Add the dressing to the salad and mix. Note: only add the dressing prior to serving or it will cause the salad to wilt.

Notes

  • Omit the cheese to make this salad dairy-free and Paleo
  • Instead of honey, you can use maple syrup. This makes the salad dressing Vegan.
  • You can add fruits and veggies to the salad, like berries, tomatoes, and carrots.
  • You can add chili flakes to add some heat.
